How to make idli fry: A step-by-step guide
Ingredients:
Leftover idlis: 4-5 (cut into 4 cubes)
Oil: 4-5 tablespoons
Mustard seeds: 1 tsp
Cumin seeds: 1 tsp
Curry leaves: a few (optional)
Green chilies: 2-3 (adjust to taste)
Sesame seeds: 1 tsp
Chopped coriander leaves: a handful (for garnish)
Spice Mix:
Cumin powder: 1 tsp
Coriander powder: 1 tsp
Turmeric powder: 1/3 tsp
Red chili powder: 1/2 tsp (adjust to taste)
Chat masala: 1 tsp
Sambar masala: 1 tsp
Hing (asafoetida): 1/2 tsp
Salt: to taste
Garam masala: 1/2 tsp
Instructions:
1. In a small bowl, add cumin powder, coriander powder, turmeric powder, red chili powder, chat masala, sambar masala, hing, salt and garam masala. mix the masala properly and set aside. Cut the leftover idlis into small cubes. This helps them get crispy and evenly coated with the spices.
2. Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Let them splutter. Add curry leaves and green chilies.
3. Add the idli cubes to the pan. Gently toss them. Be careful not to break the idlis.
Stir fry for about 5 minutes. Then add the masala mix and sesame seeds.
4. If using, add lemon juice for a tangy flavor and give it a final toss. Garnish with chopped coriander leaves.
5. Serve the idli fry hot as a snack or with a side of yogurt or chutney.
