I'm opening up the floor for you lot to share your school memories with me today with this School Custard recipe. We've got mint custard, pink custard and haunting, repressed memories today. KZbin analytics tells me most of my audience are of a certain vintage so this should appeal to all those people who were neglected, ostracised or abused at the hand of the barbaric teachers of the age. At least they gave us the delights of mint custard though. Whoever invented that is a genius.
Chocolate Wellington fudge pudding: • Did you eat Chocolate ...
Custard recipe:
3 egg yolks
1 tsp cornstarch
25g sugar
250ml whole milk infused with vanilla
Mint custard recipe:
3 egg yolks
1 tsp cornstarch
25g sugar
250ml whole milk infused with vanilla
Peppermint essence
Green food colouring
Pink custard recipe:
3 egg yolks
1 tsp cornstarch
15g sugar
250ml whole milk infused with vanilla
1 heaped tbsp raspberry jam with the seeds removed
Red or pink food colouring

Hi Chef, I was brought up on school dinners in the 1960s and experienced some puddings, which has given me serious mental health issues since. We never had coloured custard. However, we did have pink blancmange. I still have nightmares of the custard falling from the dinner ladies' serving jug in sticky globules as if she had just ‘gobbed’ on my plate. Nevertheless, major trauma stems from semolina and tapioca (frog spawn) pudding. I've never eaten either of them since. In the future, if you can find time to bring either of them up to date with a recipe fit for the 21st century, then I would really appreciate it. I need some therapy, chef, and I believe you are the one to help a fellow northerner.

Great vid Chef😂, we had pink and chocolate custard in Wakefield in the 70s and early 80s. Happy days, apart from the slipper or a crack round the back of yer bare legs from the headmistress, very painful! Definitely going to try your mint custard, looks ace.

I've never had green custard at school (Sheffield, S Yorks) i do remember having strawberry custard poured over some sort of shortbread/rusk type biscuit 😋 yummy 😋

I remember the custard we used to get at school dinners. This was a Middlesbrough school that shall remain nameless. Always hard to determine whether to eat it or drop if off with the Romans on your way to Hexham. Anyway it used to come, in all its glory, with a large chunk of very old Cheddar Cheese about the size of one of the watchwowers on the wall. You could feel feel it staring at you, daring you to prod it and woe betide if you didn't eat it To overcome a fate worse than death I used to drop it under the dinner table then push it with my foot across to the other side of the table depositing it at the feet of an unsuspecting victim. Then here's the clever bit, I would pull it back to me following the original trail of Roman Cement. When theteacher came round to inspect they would check the bowl then look under the table for any articles thrown overboard. I would feign a look of surprise then excitedly point to the line of custard leading across the floor to my sacrificial Gladiator..... Didn't work every time but anything to avoid eating that chunk of gangerous yeuk.

I remember making a girl laugh at Junior school when she had a mouthful of custard and instead of splurting it everywhere she managed to keep her mouth closed but somehow it made it's way out of her nose instead. The horror of being 10. Hope that doesn’t put anyone off your custard recipe.

For strawberry or chocolate custard use the appropriate Nesquik milkshake flavour with custard powder, Ok so custard powder isn't quite as poncey as our Chef's creation but it's what the school dinner nannies used.

I also went to school in Middlesbrough. I remember cooking lessons and being taught how to make a salad. Yep, a salad 🤦‍♀️ Came back after break, and some clown had put them all in the oven 😂
