Today I made a cake with a very addictive taste.
A cake full of flavor of coffee and caramel.
It has a caramel flavor, but I used Biscoff cookies and spreads without making caramel.
It's very simple~
I added biscotti spread to the sponge cake, but it didn't taste like Lotus cookies, but...

I think the best way to make buttercream using Biscoff spread is to use the American Buttercream method.
You will taste special buttercream with a slightly modified style unique to Boon Bake.
I really liked that the biscotti spread had cookies in it, so it felt soft in the mouth but the particles were crunchy.
It is a cream that is finished by simply adding all the ingredients and whipping it, but we pride ourselves on the best taste.

● Cup measure standard
237 ml = 1 cup
15ml = 1Tbsp
5ml = 1tsp
1 egg (without shell) 53 g
Heavy Cream (38% milk fat)
(Chocolate is minced, flour is before sieving)

● Coffee Lotus Sponge Cake
( mold size : 15cm*7cm )
3 eggs
40g white sugar (3Rbsp)
30g brown sugar ( 2 Tbsp+1tsp )
a pinch of salt
2ml vanilla extract
15 g Honey (2 tsp)
2 g instant coffee ( 1 tsp )
30 g milk ( 2 Tbsp)
95g cake flour (1/2 cup + 3 Tbsp )
20g unsalted butter ( 1 Tbsp + 1 tsp)
20g Biscoff Spread ( 1 Tbsp + 1 tsp)
● Lotus Biscoff Syrup
40 g water ( 2 Tbsp + 2 tsp)
8 g (1 tsp) sugar
20g Biscoff Spread ( 1 Tbsp + 1 tsp)
● Coffee Lotus Buttercream
285g unsalted butter (1 cup + 1/4 cup + 1 Tbsp)
100g powdered sugar (3/4 cup)
120g Lotus Biscoff Spread (1/2 cup + 1Tbsp)
5ml Kahlua (1tsp) (optional)
a pinch of salt
80 g heavy cream ( 1/3 cup )
6g Instant coffee (2tsp)
50g dark chocolate (1/3 cup)
● Lotus Biscoff Spread 25g ( 1 Tbsp + 2 tsp)
About 4 Biscoff cookies.
* Xylose sugar?
(This is the sugar used by Boon Bake)
It contains xylose, which reduces the absorption of sugar by the body, so the absorption is reduced and the sweetness is the same.
