I see Dritan always pours the milk back and forth between jugs before pouring the latte art, and would really LOVE to know the purpose and the criteria he's aiming for to achieve the ideal texture: Is the just-steamed jug of milk too foamy, or just too full to tap and swirl? Does pouring back and forth help in mixing the milk, or is it to get rid of coarser foam on top? We may never know exactly... Anyway, fantastic mad skills as always!

Why do you use a brush to clean the portafilter instead of using a cloth?

First of all it's 30 lb is the standard but it's more about the consistency than how much pressure do you push down
