Indrani Choudhury yes... Bangladeshi here....even few years ago Hilsa was luxury but now in my country during hilsa season everybody can have it.not only that the size shape and taste are better now.all you need to do is follow those rules bongeats mentioned.

বাংলাদেশে ২০১৬ সালের তুলনায় এ বছর ইলিশের উৎপাদন আরো ৩% বেড়েছে। বাজার ভর্তি ইলিশ মাছ। আমরা বাংলাদেশিরা গত বছরের মতো এবারও খুব কম দামে এই মাছ কিনতে পারছি। আপনারাও শুধু অক্টোবর মাসে ইলিশ ধরা ও খাওয়া বন্ধ রাখেন। দেখবেন সারা বছরই ইলিশ মাছে বাজার ছেয়ে আছে। Greetings from Bangladesh.

মাছটি লাল মাংসের তুলনায় ভাল বিকল্প, কারণ এতে কোলেস্টেরল নেই এবং ক্যালসিয়ামের মতো ভিটামিন সমৃদ্ধ যা মানুষের দেহের জন্য স্বাস্থ্যকর।

Ilish reminder post kora was a good idea. Many are unaware of the tapering Ilish produce, also there are many who simply IGNORE this issue. Appreciate you guys for highlighting on Ilish purchase. And I loved how the 'dripping' part wasn't ignored :) Small moves like these make way for our iconic delicacies. Bong Eats rocks!

If you fry hilsa before frying brinjal, and in the same oil of hilsa if you fry brinjal it would give more taste. But presentation, cinematography is truely commendable. Too good... Keep posting...

Yup I was about to suggest the same.in this particular recipe 1st fry the hilsha than fry the brinjal it will gives more taste.n the aroma of the fish will remain in the brinjal too.

Yes, that's true. But usually when brinjal is fried in too little oil, it tends to absorb ALL the oil in the pan. Which is why we like to fry it while there's still enough oil. We've measured, and this way we end up using less oil. You can, of course, fry the fish first if you want. The fishy oil will, as you say, flavour the brinjal. :-)

Russa Nag no certainly dont add ginger.mind it the smell of ilish will be suppress by adding too much spices as shown by turmeric nd ging also.moreover ilish need not demand much oil.if u ad minimum oil it will bringout fishes oil. By that oil cooking.will be delicious.

Followed this recipe today. Followed almost the exact measurement and method. Only added a bit of mustard powder for extra 'Jhaanjh' as I was rationing the portion of oil for the ongoing dieting woes :( turned out be immensely successful. Not exactly breeding season... Avoid catching the returning shoal (ফেরতl ইলিশ ) and the juveniles (খোকা ইলিশ)..i.e. after pujo x 2 months ..usually upto সরস্বতী পুজো

Just a small suggestion for not so expert cook like me, can you please show your measurements in terms of cups and spoons instead of grams? it becomes difficult for us to follow. thanks again guys- great effort...

Hello, Shirajum. Thank you. For inexperienced and experienced cooks alike we recommend using a weighing scale-at least for the first few times you are making a recipe. We intentionally stay away from volumetric (spoon, cup) measurements because they are terribly inaccurate. Many people don't have measuring spoons. Even with standard measuring spoons weights vary based on how much you fill the spoon. And this error gets worse if you try to scale the recipe (say you are cooking for 15 people). We highly recommend getting a weighing scale since it takes away the pressure of guesswork from cooking and makes it easy to replicate a recipe exactly.

hi.... just one thing.... why so much tumeric? is it for the video to look good or does it means more tumeric mane more taste? yes i agree tumeric plays a very important role in bengali cuisine but why so much....? if you can explain it would be better.... I am a "bangal" means my ancestors were from bangladesh... i know the taste of "ilish beguner jhol"... my mum says that ilish and chingri are those two kind of fishes that requires no masala to enhance the flavour... put it into anythinh and that become delicious... but dear you use tumeric too much....

I never had this experience of getting an olfactory sensation out of visual images. Amazing! We cook this dish the exact same way in our house. Except that we never add flour to thicken the "jhol". But this looks interesting. Will try.

Hi! I like your videos most among all. You cook with utmost love and care and definitely it will turn out to be finger licking good. Being a doctor and a foodie person I like this recipe of Ilish very much and I think it is healthy also because it is very light. Only one thing I will suggest you please try this once without using turmeric powder. In my opinion a good ilish cooked with only kalo jeere and kancha lonka tampered in mustard oil tastes best. If you try then please inform me about your opinion.Btw thanks a lot for presenting bengali cuisine so nicely. 😊
