Congrats on 100k...well deserved. Probably the best craft tutorials out there. I've been playing around with a ginger foam at work for our agave pandan penicillin. I've started adding more xanthan gum that recommended as we use a mezcal mist which kills the foam. You done much research into this? I've found some very....interesting results!

Just a quick question, what would the shelf life of the coffee foam be? Could I make a big batch (before charging it) and freezing it? After I charge it, how long does it keep in the fridge? Thank you for being with us from the beginning! You can make the coffee foam in advance and store it in the fridge for a couple of days. Just charge it in the siphon when you need it. Also, the one in the siphon should be suitable for some time. Cheers!

I love these foam videos you've been making. As far as I can gather the basic mix is 400g of water based liquid, 0.5g xantahn, 1.6g methylcellulose, 20 drops of saline and 20-25g of sugar for most applications. Do you have any good resources where one could learn a bit more about these foams? Also, I made one from orange juice to use in a mimosa, can recommend.

Congrats! Consider not re-heating your coffee, and making it stronger (more concentrated) and mixing the methyl cellulose solution into the coffee. I think the better the coffee, the less sugar you need, and the more potential to make a really deeply satisfying drink. There's the extra challenge of making coffee taste good cold, so on the other hand if you don't find the room for optimisation you're probably wasting the potential of the beans you're using, and probably are equally well off using less fresh beans or a cheaper blend (instead of single origin)

Mr Black now makes a version with Bundaberg Rum... it is Yummy. I use it in a cocktail version of a "Gunshot Breakfast" "Gunshot Breakfast" is a drink that includes Rum and milk... it might be coffee or tea or just milk... but always a dark rum and Bundaberg Rum if possible. As such I now make a drink with hot coffee, limited edition Bundaberg Rum, Mr Black (with bundaberg rum) and whipped cream I would love to make the cream on top an infused oat milk cream as the day I drink this is ANZAC day and tradionally we eat ANZAC biscuits as well but I am alergic to oats... so...
