Onion, ginger, garlic along with those whole spices and turmeric, chili powder, so much similar to Indian cuisine. Very interesting. I would apply some turmeric and chili powder around the eggs before frying to get that golden red color. Loved this recipe.

You can clearly see the influence the Malaysians took from Indian cuisine, tempering spices, base of ginger garlic and onion, it’s what we do to make our curries everyday, this looks delicious btw

I dont really mind your version since accompanied chicken dishes (fried or rendang or curry like yours) are quite common tho I have to point out that coconut rice, sambal, cucumber, fried anchovies, peanuts and egg (boiled or fried) are the basics of what we call as Nasi Lemak.

Traditionally nasi lemak is served with sambal, fried selar kunning fish, tiny bit crispy anchovies and peanuts. Today they mutated the humble nasi lemak with all sorts of savoury accompaniments. They've destroyed the beauty of nasi lemak. I prefer mine just as i remember through my childhood.

@@jc1157 If that's the case any dishes can still go with coconut rice. doesnt need to be curry chicken. There is a reason why it is called "Nasi Lemak". It's like telling the italians your carbonara should add heavy cream. In fact they authentic version doesnt have heavy cream at all.

The moment when you started to say "nasi lemak is like a buffet of all different types of food which goes with coconut rice" , i knew it isnt the traditional Nasi Lemak more like a bastardized version of it. The authentic Nasi Lemak, be it from Malaysia or Singapore, usually comes with just sambal chilli, a fried fish and ikan bilis with peanuts(anchovies). The idea is more like "Nasi Rendang" to me rather than Nasi Lemak. Anyway you are also not wrong too because in this era, we bastardized a lot of dishes too. Cheers mate but i have no doubt your curry will taste awesome .

I'm not a huge fan of curries, however this one looks really interesting. The deep fried hard boiled egg was a curve ball... Jeremy, with all of the spices in the sauce, does that final addition of salt actually change the flavor much or is it more subtle?

Interesting take on a humble Malaysian farmer's staple. Essentially, the stars of this dish are the nasi (rice) and the sambal (chili paste). Screw this up and it ain't nasi lemak. You'd add an egg and cucumbers if you can stretch the budget. And further that with roasted peanuts and fried anchovies. And if you're splurging, that when expensive proteins get introduced - chicken, fish, beef, shrimp etc. Here, you've focused on the chicken curry instead of the sambal. So, the meal is more like coconut rice with chicken curry and not really nasi lemak.
