Hi, all, Just a wee tip from an old chef. If you don’t want your tart filling to “boil over “ the top fo the pastry sprinkle a layer of sugar over the top of your Jam or in this case Mincemeat. Before you put on a lid. The sugar heats at a higher temperature than the more liquid preserves so it holds the jam down and stops it erupting over the sides. You may have notice in shop bought pastries the jammy filling has a slight skin. - that is what the sugar does. It will not be gritty unless you put on too much - so just a very fine layer will do. I love mince pie! And I can’t find it anymore, even in pie shops! Last year I bought mince tarts with and by Glenlivet in Scotland, and they were so good I got some this year, too. As good as my own, and I’m an acclaimed baker 😉.

I don't bake so much anymore as cannae lift heavier items. especially HOT ones. LOL. Some people add banana in there mince pie filling I don't like the idea but I do use brandy but you can use rum If you wish.

Well you have 9 there for the fella, where are yours :-) ? Seriously how can you restrict yourselves. I have an edearoring recollection of my late Sister who declared herself a Baker not a Cook and silently I could agree with her. I also recall the gleefull look she gave when she turned round from decorsting one of her many Christmas Trees and said " Me, I love Christmas Me" The very last time I made Mince pies I just followed a recipe, probably in the Kenwood Book and they came out so right that when my Partner tasted them as the best she had evr tasted, I found out later that she had taken some to work - she was a Post (daft statement) Person and claimed that she had made them. Unfortunately since then I have bought a jar of Mincemeat a little before this time of year after throwing away yhe previous years purchase. I am glad you chose the shollow dish option. I do not think the Deep Fill version is remotely Tradional, I looked at an Internet judgement thingy on the Best mince pies within the last few days and ALL of the were deep fill and ALL claimed to be Traditional. RUBBISH. Our "Traditional" Mams did not have Deep Fill baking pans. Rant over - lovely video btw,, I just (when I get around to it) use Inner and Outer Cutters. Cannot be Arsed with fancy patterns. If you are taking a Sabatical over the Christmas (that's something else I cannot abide "Xmas", I have no belief in a Deiity but Mr Jesus from Nazzareth was a bit special) - a good and comfortable one for you and the fellas - perhaps I should include Hognamay? Well I managed to get two of the mince pies :) I had them with warm custard (lovely) Yes, I like to use shallow pans...the mincemeat is quite strong, so they don't need to be 'deep filled' but some folk like them deep :) I just like to keep things traditional as much as possible. The secret to losing weight after the Holidays is to hold a 10 lb. weight in each hand when you weigh yourself before Christmas and exchange them for mince pies after Christmas. Works like a charm.
