I thoroughly enjoyed that thank you Faz. I would have loved to be a curry chef but short of working for nothing I couldn't ever find anyone in my area willing to take me on. Hopefully I may be 'retiring' soon when I sell my present business and will be able to afford to work without the need for an income. If that doesn't make me employable I dont know what will! I am continuously fascinated by watching different interpretations of the same recipes and trying their subtle differences.Indian cooking is vastly underrated and getting flavour balances right is where the real skill lies. So many good recipes are available on KZbin but they usually taste as though something is missing. and I think what that ingredient is, relates to the chefs 'feel' for his craft and that adds that extra 'something'. I have tried so many versions of base gravy that I have lost count. The difference between them is negligible unless it has cabbage in and then it is very distinctly flavoured. Spices are all the same, as is the protein, yet each chef puts his own stamp on his product and creates something unique. Truly fascinating. Thank you so much.

You’re welcome my friend. You’re welcome anytime in my kitchen. I have shown many people round. I’ve trained two English chefs who are currently working with me. I have also trained a Romanian and Latvian chefs all from scratch.
