In today's video, we offer you a recipe of tofu marinated to taste like feta cheese. We bet it will become your new favorite tofu recipe!

This recipe is not new for us: it first appeared in our "Savory fillings for crepes" video in February of 2017 (quite long ago). Since then we used it in various recipes (here is the playlist with them: tinyurl.com/yc...) but understood with the time that the proportions in the initial video were possibly not ideal because different tofu acts different and sometimes you may get your "feta" a bit saltier then you've expected. For some dishes it's fine, for some it's not so fine.
That's why here we put two options of proportions and we recommend, if you're cooking it for the first time, start with the smaller option of salt and sugar, then try, then make changes according to your taste.
Also if you marinating for 1-3 hours, add a bigger option of salt and sugar, and if you plan to leave it overnight, then go for the smaller option.
We need:
Tofu - 1 pack (~250 g)
Salt - 1 tbsp. (or 2 tbsp.)
Sugar - 1/2 tbsp. (or 1 tbsp.)
Wine vinegar - 1 tbsp.
Allspice
Cloves
Black pepper peas
Red pepper flakes
Coriander
Bay leaf
Boiling water
Dilute sugar and salt in a half of a cup of boiling water, add the rest of the boiling water on the final stage to the jar with the ready product.
Also good to add a clove of garlic and generally don't limit yourself, you may add any spices! For example, you may add dried basil and then add this "feta" to the Greek salad. Experiment!
The brine can be re-used, just add a new portion of tofu and leave it in the fridge overnight to marinate.
