Except you don't have to bruise the lemongrass if you're going to throw it in the blender. You only only bruise if you put it in whole (as is often done in cooking gaya Indonesia).

Yay! Chicken curry is actually a traditional food. my mum always made this in a special day to celebrate eid al fitr and Islamic new year! We love to share it to our neighbors. I honestly prefer chicken curry with rice cake (ketupat) instead of rice 😋 nice video donal!

Btw you must use pestle and mortar, it will 'squeeze' more the flavor and taste out of the spices Also you can't use lemon juice to substitute tamarind paste, there is an unique taste, that lemon can't replace Try to look for tamarind, fresh will be better Also (again), if you are alergic to milk coconut, you can use fresh milk too, the taste will be the same, but less 'sticky'

the coconut milk can be mixed with water (the one you put after tamarind) earlier and the nuttiness will soak into your chicken also, why bay leaves? curry leaves exist for purposes

Nice recipe, Donal!. As an Indonesian homecook, I have some tips for you. To get a nice aroma (in my opinion), it's best to roast turmeric (with skin on and peel it before blend it with another ingredients) and candle nuts first. And for the coriander seeds, you can pan grill them :).

Hi Donal - when you added the lime leaves I wondered if you were using Kaffir Lime leaves? If they are you may want to give a short explanation of what they are, the fragrance and taste they impart and where to usually find them (Asian section of a good supermarket, Asian grocers, and always on line.) They store well in the freezer. Just thought many may not be familiar with them yet, they just take a dish over the top.

Hi, there. That's so nice to have Indonesian recipe in your channel! There are some suggestions from me. First, I know not everyone loves chilli, but of course curry is most known for its spicy taste; so I would recommend that you add 2-3 more chilli pepper. The heat that these pepper give should be perfect. Second, I am pretty sure that we don't add tomato to the recipe because the taste will be a little bit sweet when it should not be. It's okay actually for this case; I'm pretty sure that you like sweet touch to the curry. Third, you can try to add star anise in time you put those leaves to the recipe. I don't know how it affects the flavor but it should be great. Fourth, try to combine thick coconut oil and thin coconut oil. The final result looks so yummy, Donal! Great work. P.S. nice rice by the way. P.P.S. I'm hungry after watching this.

Donald, you need to chop the lemongrass stick so the blender can blend it smoother, and the coriander & Cumin you should mashed into the mortar pestle first so it can be a very smooth paste to it.

Different region in Indonesia have their different style of curry (gulai), in my home town West Sumatra we do it slightly different. But one thing for sure we like it hot, we put lots of chili in it 😀

Why as Indonesian people, I never know or see or eat or even heard this type of chicken curry, I only know that chicken curry (Kari Ayam) usually use coconut milk (santan) in majority and never use to tomato and one more thing that vegetable that we add is potato....well maybe it's Ubud style as you said chef. BTW thanks for introduced Indonesian food, i hope you will cook another recipe from our country that easy to make for the people on your country like our snack from flour and mixed vegetable, it named Bakwan (i like this snack, so i introduced it to you😊). We usually put the coconut milk after the chicken, we use 2 types (a thicker one and a thinner one), and we don't really care about splitting it.. Ahahahah.. Anyway, did you tried Bebek Bengil or Nasi Bali when you were in Bali? If you didn't, I think you should try when you visit Bali next time..
