Great great episode! 🙏 The knowledge of Hidefumi Kubota! I would so like to see 2-3 more episodes. 😊 Really appreciated the deeper information. To be at the beginning of creating a bread culture is a great opportumity. It gives a much wider bandwidth for creation because you are not limited by rooted conventions. I love seeing a part of the development of the Japanese bread culture through your documentaries.
