Growing rice, raising vegetables, dive in the ocean to catch fish, and baking bread.
Shoko Iwaki and her partner Shogo of "Wara Pan" live a near-self-sufficient lifestyle while raising four children.She produces and sells community based bread by appointment only at the bakery next to the house which they live. She is self-taught in baking, and all of bread is made with home-cultivated leaven, without using commercial yeast. The bakery building was self-built by his partner Shogo over a period of two and a half years. This is the ideal combination of living and baking.

She is a wonderful strong woman. She works so much. All those hours standing on her feet, making all that beautiful bread. I wish her so much happiness and love in her life. She deserves it. Thank you for sharing.

I think she had the values she cared about from early on. That's why her life has not been blurred since then.

So much respect and admiration for this lady. Being a baker is hard itself, let alone running your own small bakery business with 4 kids. Kudos to her. ❤ I'd love to try her bread. It looks wonderful 😍

Her bread is spectacular. The crust, the air pockets, the inside colour. Truely, this is one of those times where I wish I could reach into my screen just to grab a bite from that bread. Wow. I bake bread, but this leaven idea is new to me. I only found about it by viewing this channel

Such beautiful flavors and thoughtfulness put into the bread, there is no doubt it would be good to the body. I’m inspired to be more bold and experiment! I also love seeing bakers working near their families and home. Thank you for sharing these wonderful people and their work!

Great one, what a cool person! I really liked the wild yeast she uses and the way she adapts the ingredients to the seasons. Everything looked so good and the different ingredients were so appealing. Wish I could taste it all. 😊 Thank you. 🙏

She is a total inspiration. Can someone please expand upon the wild yeast water, does she add kefir grains.. what did she add to cause fermentation? I def want to try this, I’ve never seen someone do this in bakeries here in SoCal
@reiyawatanabe
@reiyawatanabe Күн бұрын
Thanks for your comment! To make fermented water, I see she added lemon, raisins and tea. The lemon and raisins have yeast on the surface, and the sugar content of the raisins dissolves in the water, so the yeast feeds on the sugar and multiplies. I honestly don't know how the tea would act on the fermentation either. You can ask her directly on Instagram if you'd like!

Your video makes me think, what kind of bakery do I want to create? Rather than just following the trends.. Thank you so much for sharing inspiring videos!

@reiyawatanabe
