⬇️⬇️English recipe follows⬇️⬇️ 薯仔炆排骨 材料: 急凍排骨粒1斤 薯仔(大)1個 薑1舊 蔥1條 處理: 1. 急凍排骨,清水解凍。 2. 排骨解凍後,倒去水分,加入粗鹽1茶匙乸15分鐘,去除雪味、腥味及加入少許鹹味。 3. 排骨,清水沖洗乾淨,擎乾水,廚紙索乾。 烹調: 1. 大火在鑊內燒熱油3湯匙。 2. 放排骨落鑊煎香。 3. 蔥,切段、切粒及切絲。 薑,切片。 薯仔,切大舊。 4. 排骨,一面已煎至金黃色,反轉繼續煎,推向鑊邊。 5. 薯仔及薑片,放鑊內。 6. 薯仔及薑片,一面已煎至金黃色,反轉另一面繼續煎。 7. 加入蔥段。 8. 轉慢火。 9. 加入調味料: a. 蠔油1湯匙半 b. 生抽1湯匙 c. 胡椒粉少許 d. 冰糖1大粒 轉大火,炒勻,加入大滾水蓋過排骨,但避免加入凍水,以免味道被沖淡,冚蓋,大火滾起,轉中火,炆15分鐘。 10. 排骨已炆了15分鐘,熄火,焗3分鐘。 11. 開大火,快炒排骨至收汁。 12. 完成,上碟,放上蔥粒。 13. 可享用。 Braised pork ribs with potatoes Ingredients: Frozen pork rib cubes 1 catty Potato (large) 1 No. Ginger 1 No. Green onion 1 No. Preparation: 1. Pork ribs, defrost in tap water. 2. Pork ribs have been defrosted, pour away water. Season with 1 tsp of salt, to remove unpleasant smells and add some salty tastes to them. 3. Pork ribs, rinse with tap water. Drain. Dry with kitchen towels. Steps: 1. Heat up 3 tbsp of oil at high flame in wok. 2. Put pork in wok, fry well. 3. Green onion, cut in lengths, dice in cubes and get shredded. Ginger, get it sliced. Potato, cut in pieces. 4. Pork ribs, one side has been fried into golden yellow, flip over and continue frying. Add in boiled~up water just covering up the pork. But avoid adding in cold water to decrease the flavour. Cover up the wok. Heat up at high flame. Turn to medium flame and braise for 15 minutes. 10. The pork has been braised for 15 minutes, turn off fire and leave it for 3 minutes. 11. Turn to high flame, stir fry the pork quickly to make the sauce become thick. 12. Complete. Put on plate. Put green onion cubes on top. 13. Serve.
