Mayo is literally just eggs and oil, there’s nothing at all weird about putting mayo in a cake Edit: Ok I have never had so much activity on a KZbin comment...yes ok I checked a jar of mayo and while it does not have mustard or “spices” as some commenters have claimed it does have some lemon and vinegar. However those ARE sometimes also used in cake, you can add them to the milk to make “soured milk” which approximates buttermilk, I have done this with many cakes. So I still maintain that regular mayo is not at all weird to use when making a cake.

Even if I didn't see them pouring the cake base in from a type of box cake, it is almost impossible and highly impractical to replicate the smooth sheen of a finished, set box cake cake. They also admit to using regular frosting as well. What you get is quite replicable in your home kitchen, but I've no doubt their years of dedicated experience have perfected the art. Lily Belle I disagree it’s flavorless and I hate canned frosting. The only thing going for it is it’s really moist. Homemade cake is so much better. Portillo’s cake is just doctored box mix they use mayo and they use canned frosting. The cake you bake off of the Hersey’s special dark cocoa container is far better and more flavorful with the same really moist texture try it.
