If you don't cut them the axle flanges will pop out. That's what happened to me. I bought the kit from racing diffs and it said you no longer need to trim the axle flanges. I didn't do any trimming per the instructions but the axle flanges pop out after a few miles of driving.

Is cutting them like this actually okay?? What if I cant get it exactly flat or smooth?? Will the clutches not engage properly?? Should I try this myself or send them to the machine shop??

If you have doubts, better send them to a machine shop. If you use grinder regularly, like every day, then you'll find this rather easy.

It's better to cut a bit more than a bit less. Flange shouldn't touch a friction plate.

60-100k km is some usual service point. We sell them separately, the price is 40eur.
