I can not see a "New" option under file in my parallel drop down menu

Sometimes Parallels acts funny and you have to click on the icon in the Dock for Parallels for the menu to show like it should. Try that and let me know.

Thank you for the tutorial. I am able to use Firefox, so Internet works. However, under Settings > Online Accounts - I get the error; No Internet Connection. Any suggestions?

In the Parallels Menu, if you go to Actions, Configure, then Options, look for Sharing. You can tell Parallels what you want to share with your Ubuntu VM. This assumes you have the Parallels VM tools installed, which usually happens right after you complete installing your VM. Let me know.

Thank you very much for this helpful tutorial! I'm having one issue though: my keyboard in Ubuntu is set to English (US), which is qwerty, but I'm on an azerty keyboard. In the setting I can't really find a way to change this. Do you know of a solution?

Maybe. So assuming French since that seems to be the one most used with Azerty. So go first in Ubuntu, Settings, then Regional and add French (or your appropriate language). Then go to Keyboard, Click + under Input Sources, Click on the three vertical Dots, then choose Other (you have to click on Other for this to work), then in the search bar start typing French (or your appropriate language) and hopefully you will see Your language with Awerty, select it and then click Add Button. If you want it to be primary you may want to drag it above whatever is your current default. Note: The first time you choose Region, it may require installing the multi-language support if it has not been installed previously). Let me know if that works. I am very curious now. It worked for me but I never took French so I can truly test it.

If under Regional you don't get the languages you expect to see, you may have to run this command in the terminal -- _gsettings set org.gnome.desktop.input-sources show-all-sources true_

@@TechTroublemaker instead of [ok] it says [depend] for 6 rows all related to SSSD. such as : Dependency failed for SSSD NSS service responder socket.
