Installing 360 Siphon roof vent cap on 2019 Coachmen Freelander 26RS.

The 360 Siphon is a good vent but you exposed the problem with the odor when you removed the old vent base. A lot of manufacturers don't seal around the vent pipe where it comes out of the roof. That little gap around the pipe will allow odor to be sucked in through the ceiling by an A/C or vent fan, or blown in by the outside winds. I doesn't take much to make a horrible odor in the RV. Sealing that gap most likely will fix your problem rather than the new vent. If you have other vent pipes they should be checked also.

Thanks for the advice! I will re-check that and seal that also. Doesn't take much to pull it back up. :) I also found out the Bathroom vent fan hood seal is not sealing because it's brittle now.
