Sure! I'd suggest grinding up some to make mushroom powder and add it to the flavor you like. Then, of course, add some of the dehydrated sliced ones, too.

I’d like to just make the basic mix and add chicken, beef, dried celery, onions, or mushrooms as needed. What measurement of those would you add to make the equivalent of 1 can of soup? Thank you for sharing this. That link is quite a resource.

If you make the basic soup and add the other things as you need it for a recipe, I think I'd start with 1/4 cup and adjust to achieve the flavor I want.

Off topic a bit, is it safe to can celery soup? No thickeners in it just chopped celery & onions with spices & chicken broth

Here's some info I got for you. The first link explains how to safely can onions. You could certainly use chicken brother because its processing time is less than the onions. You could also add the spices and dried herbs. Celery is a different story, though. It's never been tested, so there's no approved recipe. Also, considering celery contains so much water, it would probably just become mush.

I have dehydrated celery that I've ground into powder. I'd add some of that with some small pieces of chopped cellery.
