Instant Pot Cheeseburger Soup
1-2 Tbsp. Cooking oil
1 pound Ground Beef
1 small onion, diced
1-2 tsp. Minced Garlic
1 cup Carrots, diced
3 cups Potatoes, diced
1 tsp. Salt
1 tsp. Pepper
1 tsp. Dried Parsley
3 cups Chicken Broth
10 oz. Evaporated Milk
2 cups Cheddar Cheese, shredded
1/2 cup Bacon Bits
1/2 cup Sour Cream
1. Set Instant Pot to ‘sauté’ and add oil.
2. Add ground beef, onion & garlic and sauté until meat is cooked and crumbled and onion is translucent
3. Stir in diced potatoes and carrots and cook for another 1-2 minutes
4. Add salt, pepper, parsley & stir to combine
5. Turn off Sauté
6. Add milk & chicken broth and stir well.
7. Put lid on instant pot and turn to ‘sealing’.
8. Cook on manual for 5 minutes
9. Do a natural release for 10 minutes and then a manual release of any remaining pressure, and remove lid
10. Add sour cream, bacon bits, cheddar cheese, and stir.
11. Enjoy!!
