YES PLEASE! I totally second that! I don't drink anymore BUT have never tasted Mead and I am a big honey lover. Use it in my coffee and in peanut butter Sammie's or with biscuits and butter. Yum! Please Emmy??!🤗🐝🍯☕🍵🍗🍞 and my grandkids and daughter eat it on chicken!🧡🖤🧟🧛

Yes! My mother and my brother both make their own mead from time to time, and it's evidently pretty easy. It's always fun seeing the outcome of flavour experiments, adding different fruits and such.

Very broadly speaking, wine is made from fruit and beer is made from grain. I suspect that part of the slow fermentation situation is that you are using bread yeast, which does not handle high levels of sugar easily. Wine or beer yeasts are specifically bred to thrive in a high sugar solution. It doesn't mean you can't use bread yeast but it will take a lot longer because the high sugar content will slow the yeast down (and sometimes kill it off completely).

Bread yeast is the tradition because pioneers used what they had, ie bread usually sourdough yeast. There are many American home brew recipes that use bread yeast.

​@@healinggrounds19, as I said in my original comment, bread yeast or sourdough (which includes lactobacillus, which gives sourdough the characteristic sour flavour) will work but much more slowly than a beer yeast. Purified bread yeast, which is what is sold these days specifically for leavening bread dough, is much more specialised that sourdough hence more fragile because monocultures are inherently more vulnerable to changing environmental conditions than multicultures like sourdough.

@@healinggrounds19 Old American brewing recipes didn't use the same bread yeasts we use. Commercial baker's yeast today is an entirely different animal bred specifically for gluten-devouring and gas production properties. In those days, the yeast used by bakers was natural yeast pulled from the air by leaving a culture of flour and water out. That's where most of our fermented products came from - leaving stuff out to catch yeast. That's part of why ever region has such different flavor profiles in their wines and beers - and why there are so many yeast strains available on the market today. Wild yeast is better at fermenting sugars. It lives in fallen fruit and tree sap, sugary liquids. It lives in animals mouths, another place that can at times be full of sugars from plants. Bread yeast is great at fermenting the specific, more complex carbohydrate chains in flour, at the expense of not being so good at simple sugars

Bread yeast can work if there isnt too much sugar. If there's too much sugar or the alcohol content approaches the yeast's tolerance level it will stress the yeast and can give undesirable off-flavors and smells. Incorrect PH can also stress yeast and cause off flavors and slow or stall the fermentation.

Emmy, if you're looking for an interesting fermented beverage to make at home, I highly recommend trying tepache! It is a low-alcohol drink made from the rinds of pineapple. Very refreshing and a fun project to use up the scraps after eating the fruit.

I'm currently making honey mead and the fermentation process takes from 4 to 6 weeks. I believe your wine is still too sweet because the yeast still hasn't fed of all the sugar.

It hasn't been distilled so no risk of going blind from drinking it.

It's the precursor to corn liquor. If she were to let it finish fermenting, and then distill it, THEN she would have "moonshine", but she wouldn't have much given the small quantity that she made. (Given local or federal law, the small amount could also be necessary to avoid any potential charges of illegal liquor production/possession of precursor products.)

There’re a few missing steps. She needed some amylase enzyme to break down the starch in the corn. She could have gotten this by wrapping some popcorn in a wet towel and letting it start shoots. Then drying it, breaking off the shoots and grinding it up in a coffee grinder. This is called malting. Then add this malted corn to the corn cob wort and keep it at about 150 degrees for an hour. Cool that down and pitch the yeast. She wouldn’t need to add 4 lbs of sugar to that.

No it's not white lightening . That's sour corn mash distilled . It's around 190 proof and clear because of distillation . Wine is only around 14% abv which would be 28 proof

By the way, my favorite mead is a spiced mead made with chamomile, lavender and wild cherry bark (I ordered from Mountain Rose Herbs. I also use their herbs for homemade root beer). Ken Schramm's The Complete Mead Maker is a great reference book. I made superb mead from it.

You should have left it until it stopped bubbling and the longer you leave it the yeast will settle more to the bottom and it will be clearer. I've watched a few brewing videos on "city steading" site..they're great..very knowledgeable and helpful

Kombucha is awesome when you make it yourself. You should do it. If you can make sweet tea, you can make kombucha. You should give flavor reports during the fermentation process, then reserve some for starter liquid AND to explore how vinegary it gets. After you have kombucha vinegar and scobys (symbiotic culture of bacteria and yeast) you can make anything from soaps, to tonics, marinades, vinegarettes, face masks, garden fertilizer, vegan leather, fruit roll ups etc etc!!!! It's such a multifaceted thing to show your viewers. I absolutely love brewing. Mine has a natural apple flavor that is AMAZING.

For vegetable wines you need to add some type of fruit acid ( orange juice / lemons), wine making yeast, tannic acid (can use tea leaves) and yeast food ( buy at brewing store or add raisins). In general, you want to make sure your ferment is not overtaken by dangerous organisms. You can create toxic byproducts.

For fermentation I highly recommend the Noma fermentation cookbook. It is an amazing read with a lot of backstory on which microorganisms to use and/ or attract.
