I grew up in Trinidad and the old people make wine regularly. I grew up seeing my grandmother make buckets of different wines... Rice, bananas or silk figs(not brown figs) in the islands bananas are also called figs... Pineapple, cherries, pomcetheyre and even marijuana wine or ganja wine..

I make wine in 5 gallon (20L) water bottles, basically the same way (without the hot pot). I let mine ferment 30 days, then transfer to another clean 5 gal bottle, top off with more grape juice, and let it sit another 30 days. I use latex balloons on top. After this 30 days, I transfer to bottles (I have 1 liter class bottles with a snap seal lid). I usually let that sit another 30 days before drinking. I have made wine from grape and some from apple juice. I have some bottles that are more than 2 years old. An additional trick is to take about 20 wooden sticks (like tongue depressors) and heat them until about charred (oven or over a fire, careful that they do not flame up themselves). I add these to the initial fermentation to simulate the fermentation in wooden barrels. Greatly improves flavor. Side note: No homemade wine will taste exactly like from a commercial winery. But, I am used to my wine and now not so excited over commercial wines. Also, different brands of grape juice will produce some slight variation of flavor of the homemade wine.

Store booze will always be cheaper than this. Some everclear diluted with water and other flavorings is way cheaper and safer. This is a matter of availability. I'm in India at day 18 of what is seems like is going to be at least another month lock down because of covid-19. There is no weed and no booze. I've been blending the leaves of wild marijuana plants into milk for over a week. Shit works great. Making some wine in massive jars out of sugar water and yeast. Shit works. It isn't good, but when you're only drinking once a week, it's fine.

I recommend to make apple cider ('hard cider' in US speak) instead, using a similar bottle of 100% apple juice and 3/4 cup of sugar. (The sugar does NOT make the end product sweet, it increases the alcohol to wine-like levels) Why apple: because with something called 'wine' the bar is very high, you're looking for interesting flavor notes, getting the acidity just right, there is a lot of oak notes that you're not getting with a basic fermentation like this, and none of the aging and fine-tuning happens so you're setting yourself up for a bit of a disappointment if you're expecting a half-decent table wine. So you can't really serve it to your friends unless you're all in prison. :) But with cider, most of that goes away: it's okay if cider is a little sweet, it's okay if it's bubbly, it' okay if it's still, it's much harder to be disappointed as long as there's enough alcohol in there and enough sweetness to be drinkable. ;) If you let it ferment all the way dry (all sugar eaten up and turned into alcohol) then the result is like an extremely tart white wine (or combination of white wine, apple vinegar and vodka if I'm honest :) ) but you can 'back-sweeten' it with *a little bit* of non-fermentable sweetener like stevia or just any artificial sweetener you swiped from Starbucks. (Don't add sugar because your Yeastie Boys will start turning it into alcohol again and if the lid is on the bottle then you're creating a bomb). So the result can be a little sweet (but not too much) to take the extreme tartness away, but again: with cider that's okay! There will be enough taste and alcohol that you can serve it with a dash of carbonated soda water and it'll be just as enjoyable as Prosecco sparkling wine, with a pleasant hint of apple flavor. EDIT: also in the video all the yeast would still be in the bottle: if it's cloudy that means yeast is still floating in there and that's going to taste terrible. After fermentation ends you need to let the dead yeast sink to the bottom, and then transfer (using a hose/syphon, don't pour it) into a similar empty bottle, leaving the bottom layer behind. Then let that sit for another week and then you can transfer to regular bottles, or just transfer one more time back to the (cleaned) original bottle and serve from that. :)

Or you could just add the sugar and yeast and fill the bottle back up with warm water and skip the insta pot process and keep it in a dark place for 3 weeks. Then pour the mixture through a cheese cloth to strain large particles out into the wine container of your choice. (I’ve done this quite a lot)

Yeah I was thinking about filtering the yeast because it's one of the things I did when I fermented drinks to make mead, if you don't siphon off the liquid you won't have a clear drink and it will taste off too.

You have to let the wine sit undisturbed until all the yeast falls to the bottom and the liquid becomes clear. Then you siphon off the clear part of the wine. This process takes several days after the fermentation is finished and the gas stopped lifting up the yeast particles.

Nah, when you're testing a wine immediately after fermentation, you get that super strong ethanol taste/smell which is probably what she was describing when she said "you kinda smell the booze before you even taste it". You gotta give stuff at least 6 months before the flavour mellows out a bit.

@@Hapi4U It isn't to get rid of the sweetness. The reason for the 6 month time frame is to have ALL of the yeast die off after the sugar is consumed. During that time frame you have to "rack" the wine periodically. I do this once a month. That means syphoning the wine to a clean vessel using a syphon that draws the liquid from a 1/4" off the bottom, leaving the dead yeast behind. Yeast settles to the bottom when it dies. If you drink the wine too soon, the yeast is still suspended in the wine. It doesn't taste good. All wine is "dry" wine when it is done fermenting. Sugar is added after fermentation to make sweet wine. It is a long process, but is very interesting and fun. I have made a lot of wine over the years.

Yep, They objected to the wine that had been used for 2000 years so figured out a way to prevent grapes from fulfilling their God given nature. So if you just use fresh grapes you can skip the yeast and just let nature take its course.

This is true. I don't drink alcohol. I came across someone's recipe that called for red wine but they said if you don't drink you could use grape juice. So without knowing that this was possible, I used red grape juice for my pot roast in the crockpot. The first day it wasn't noticable but going forward I thought someone poured vodka in my leftovers it was so strong. I felt I had symptoms of a night of drinking. Now I know.

@MJW Weirdly, I'm the exact opposite. I can't drink borboun or whiskey. I have a terribly touchy stomach and my and prone to migraines, and dark liquors make both worse. Emmy, try redoing it and mix Concord Grapes and White Grape juice. As for the sugar Also, get one of those airlocks which goes on top of the bottle, you use a rubber cork and you add water in the airlock. the CO2 releases through the water. I think you will get better results. My Ex makes Mead if you degas the wine without it can affect the taste. You should use a glucose sugar instead of a sucrose sugar or make inverted sugar, you can find how to make it on-line basically it's 2 parts Sugar (cane) to one part Water (2 cups Sugar to 1 cup water) then add in .325 oz of lemon juice. stir sugar to dissolve and heat just below boiling while stirring, hold the temp for 30 minutes. then cool it down to warm. this will make your sucrose sugar into a mixture of Glucose & Fructose.

i use the 5 gallon buckets as primary fermenters, then drain (by means of siphoning) them into glass carboys and cap them with fermentation locks. at the end of 6 or 8 weeks i bottle the wine, generally in 1gal glass jugs. then the aging! you can skip steps, sure, but effort really pays off!

I make wine regularly. If you buy the juice, buy the yeast, buy the sugar it adds up to more than a bottle of wine ! If you are going to make some use something free. Blackberries from a hedgerow. Dandelions ( my favourite). Nettles or dozens of other things you can find in the countryside

You don't need the instapot, just mix the yeast (I use champagne yeast) with some sugar dissolved in warm (not hot) water to start the yeast for an hour or so, take a couple cups of juice out of the Welch's bottle, add 2 cups of sugar back in, add the yeast solurion and cap with a cheap airlocks from wine making supply stores and wait 3 weeks to a month-no bubbles- transfer to clean bottles leaving the yeast crap in the old bottle-wine! Wish I'd known in HS how easy it is.

There was absolutely no purpose to the Instant Pot in this process. All she needed to do for a decent wine was add some white sugar, add the yeast, let it ferment for the roughly two weeks, degas the wine, transfer for the secondary fermentation and then back-sweeten if she wants it sweeter. She could have made a very drinkable wine this way.

when you mentioned a gas balloon it reminded me of a prohibition video off of the Ushanka show. In the Ukraine during Gorbachev's "war against alcoholism" people immediately switched to making moonshine in their homes and especially in the farm villages. A fun joke of the time was the use of medical latex gloves to cap and act as the gas bag during the fermentation process. You knew the 'shine was finished when the hand was nearly full. They started calling these "Gorbachev's hands" or "Gorbachev waving high" I think. As well as the occasional taping all the fingers down except the middle one. lol. It's been a while but thanks for making instant pot wine Emmy!

Bread yeast can be used you would get an alcohol some where between 3 to 7 percent, wine yeast can get up to 20 %, some beer yeasts up to 20 % as well but that would be a very strong dry beer as it would of fermented out most of if not all of the sugar. Using finings to clear the wine helps with the taste a one stage or two stage packet will do more than a galleon, also use a glass carboy plastic can often leave a funny taste. It can also help the yeast if you put it in a cup with warm water and a little melted sugar to give it a bit of a head start make sure what ever juice you use is not too acidic or it will kill the yeast before it does anything. Emmy if you do happen to read this please make some mead from your own honey home made mead can taste epic

I make a lot of wine with fleishmanns bread yeast instead of wine yeast and my ABV is always around 12%. If you let the wine sit long enough to clear the "bready" taste goes away. Works really well. I never have any need for finings or even stabilizers since I dont need to backsweeten.

I'd made some a few weeks ago, just two cups sugar into the grape juice bottle (no instant pot) and a teaspoon of active dry original yeast, and in two weeks is absolutely delicious. (It helps to put it in the fridge overnight to get the sediment to stick to the bottom after the two weeks, then pour into another bottle)

@@SoultalkOG Considering ethanol is the antidote to methanol, and this isn't being distilled so the 1st 1% isn't all methanol, it just sounds like wine to me. All wine has some amount of methanol in it, it just also has the antidote conveniently right along side it, an abundance of ethanol/alcohol. As long as you don't distill the wine to make a brandy you don't have to worry about methanol poisoning.

So, a couple of tips to improve what you're doing here: 1. Separate out the yeast This can be done by racking the wine into a separate container after the yeast has settled to the bottom or by pouring it through a cheesecloth a couple of times. 2. Store the 'wine' in a glass bottle The alcohol in the wine can actually eat away at the plastic over time and create a bad taste or even toxic chemicals in the wine itself. By storing in a glass container this can be avoided. 3. Add nutrients to the juice before starting The yeast used doesn't only eat the sugars in the juice but also certain vitamins and other minerals found in grapes. Nutrients can be bought online pretty cheaply to help feed the yeast and allow it to live longer. 4. Stop the wine early If your mix is tasting too strong when you finish you can try to taste as you go and stop the fermentation process early using potassium sorbate or by putting the wine into your fridge for a day and then removing the excess yeast. There's more that can be done obviously, such as juicing your own grapes or aging the wine for longer, but these tips should improve the taste of your wine. Of course, if you're just trying to make cheap alcohol, the original recipe works great, but be ready for a bad hangover the next morning.

Instead of using bleach to sanitize you can just add a bit of water and pressure cook for a little bit. Heat is a better sanitizer and then you don't have to worry about rinsing out the bleach with maybe not-sanitary water.

Make sure your juice is preservative-free or the yeast won't ferment. Frozen concentrate juices work best. Most bottled juices contain a small amount of sodium benzoate, benzoic acid, or sulfur dioxide as a preservative.

You can substitute the wine yeast with bread yeast. They're the same species but bread for slightly different qualities. Bread yeast has lower alcohol tolerance, reducing the total alcohol, but it will taste fine and if you add plenty of sugar it can still get to 12% in my experience which is enough for a somewhat dry wine. I like to do this process to make apple cider/wine

However this process differs from heat distillation in one important way, with heat you can remove the first part called the foreshots this liquid has all the methanol in it and in Jacking you can't separate the methanol. Why does that matter? Well, methanol can give you a nasty Nasty hangover.

Professional wine maker here, I had someone ask me about this and I was intrigued so I looked it up. Great job the only thing I would have done differently would be to stay away from bleach, if we are looking at minimum viable, not having to buy chemicals and equipment, just boil water in the insta pot and you will sterilize it that way. Bleach in wine will absolutely give off tastes. Also time is your friend, two weeks will complete fermentation but it probably needs to age 3-6 months (in glass if you can) to soften up the flavor and balance out the acids. Good job overall though, this was really innovative.

Speaking as someone who was literally born and raised on a vineyard and spent more time than I care to think about on all parts of the wine making process, you have to be very, very careful doing stuff like this. If the temperature is even a little off with that pot, or the sugar ratio is off you could end up putting someone into the hospital with it. Sick and/or blind. There is also the fact that many companies that produce grape juice add chemicals that aren't mentioned on the label to their juice specifically to prevent people from using it to do this, that can make you sick as hell if you do and drink it not realizing the additives are in there

When I tried this for a personal-only science fair project at home, I didn't do the heating part and just used bread yeast. Instead of drinking it after letting it sit for 2 weeks, I filtered it through coffee filters, then put it in the freezer until it started to freeze almost to a slush. It tasted amazing as a slush and chilled.

It is legal in the US to make beer or wine at home. Just not distilled spirits/liquors. And distillation by freezing is considered distilling and thus, prohibited. 100 gallons per year, for an individual, or 200 gallons per year for a family/household.

One word “racking.” Wine making is a process. You had a good start for your batch, but you need a lot more time for the yeast to fully do their jobs. As the yeast die you need to rack off your batch. Yes you will loose some product to the dead yeast but it will help in clearing the batch and improving the taste.

oh dear me, don't tell someone here actually knows something about wine making. I've never even made my own alcohol, but I know enough from 20 minutes on KZbin to know this was terrifying to watch. At least she mentioned disinfecting the instant pot. Some people out there are gonna be like "huh, I don't have bleach, I'll just rinse it with this glass of water I left on the counter for the last few days". What you call a charcuterie board, looks like what we call a cheese platter here in New Zealand. A cheese plater here can include cured meats, dips, as well as fruits and vegetables with the cheese. Don't know what the hell y'all people thinking but Pruno, or prison wine, is an alcoholic beverage variously made from apples, oranges, fruit cocktail, fruit juices, hard candy, sugar, high fructose syrup, and possibly other ingredients, including crumbled bread. Bread supposedly provides the yeast for the pruno to ferment. SMH

Why did you put it in an instapot? All you need to do is take out the juice, put in the sugar (like you did in the beginning) then just add a teaspoon of yeast, shake the heck out of it until the sugar is fully dissolved. Unscrew the cap enough that when you squeeze the bottle the cap goes up, but when you left go the cap drops back down. Place in a dark place for 2-4 weeks, chill in fridge and drink now or rack it to a dark bottle for long term aging.

Emmy,, I am not sure what you are doing, other than over complicating an easy simple recipe for home made wine. Absolutely no need to cook or steam this wine. All you needed to do to make this wine is buy the 100% juice in the jug and add the sugar and any yeast and just let it set in the water heater closet for 21 days. All you need is a warm dark closet just like where the water heater is located. This is the most simple wine to make and you are adding too many steps and making something simple complicated. The only thing complicated or work intensive is just adding your sugar and shaking until it is dissolved. REMEMBER: the more sugar the more alcohol. This is sooo simple, 100% juice, yeast and sugar (shake and dissolve the sugar) and wait 21 days. (KISS)

@@ferrajay4486 Yes, a simple bread yeast like Fleischmann's. Just remember to pour a little juice out to make room for the sugar. Leave the cap on after shaking but loosen it so when you squeeze the bottle the cap moves up and down but doesn't come off. This allows gas to escape and keeps bugs out. Just in case it does overflow I would set my juice jug down inside a clean 5 gallon bucket. let it set for at least 21 days and do not mess with it just let it ride.

@@spliceoncharlie only thing I would add to this is to siphon it into a different jug about halfway through the 21 days (since there is nasty sludge that forms on the bottom), then place the top back on. Also excess sugar will just make it sweeter. The type of yeast determines the alcohol content. Normal bread yeast will probably give you between 10 and 12% alcohol.

@@christopherritacco1955 You should never mess with it until it is finished. Siphon afterwards never during. The sludge isn't going anywhere and will always stay on the bottom. You are right about the sugar, I meant to say add a little more yeast. The alcohol content is increased as long as the yeast is eating the sugar and once the yeast stops, it's close to finished. bottoms up.

@@alphasaiyan5760 same thing lol. It's all moonshine, the only difference is brandy is made by distilling fruit, whiskey by corn and vodka is mostly sugar. Moonshine is basically the term for making hard alcohol without a license

In Germany there is seasonal product called Federweise. It is actually white wine most, i.e. white wine that is still fermenting. It is freehy light sweet, quite nice, and a bit deceptive, because it gets you drunk sooner than you think. Therefore I would say you drank your wine either too late, or too early.

You might have better luck not adding sugar and using 1/4 package of the yeast. The grapes have enough natural sugar to ferment. It will be a little drier and less yeasty tasting. If you do choose to add sugar maybe no more than 1/4 cup. Give it a try I think it will be better. I ferment any wine i make at least a month. It gives it time to settle so you don't have to use finings to clear it off. You will get a way better taste.

I refuse to use bleach to sanitize. I've had cases where the tiniest bit of chlorine was still in the container, even after rinsing out, and it skunked my entire gallon of mead. It gave it a sort of.. plastic-like off flavor to it. I pretty much use no-rinse acid sanitizers because it won't harm the flavor or yeast even if you have a bit of it left inside the fermentation vessel.

A splash of distilled vinegar, a drop of Dawn, and hot water works just fine, as well. Though, I guess vinegar could be considered one of those "no-rinse acid sanitizers".

Seriously, this part made me cringe. Just stop by a homebrew shop and pick up a small thing of StarSan (or order online). If you're doing stuff like this, a small container will last a lifetime.

Great video..just one thing to add..Instead of taping the cap and since you're ordering the yeast from a specialty store anyway, it's best to buy yourself a plastic air lock which allows Co2 to escape safely through water without contaminating your wine. The method in video unfortunately exposes you to wild yeast which can ruin your wine and make leave you preying to the porcelain gods if you know what I. mean. The homebrew air locks can also be purchased on Ebay super cheap or at any homebrew supply store.
