Instant Pot Lamb Stew *What to do with Leftovers*

INGREDIENTS BELOW!
I used my leftovers from my roast lamb to make this delicious stew! It's so easy in the Instant Pot. Substitute beef or leave out the meat for a vegetarian meal!

2 lbs cubed lamb leftovers (or raw) or substitute beef
2 Tbs Olive Oil
1/2 cup chopped red onion
1/2 cup chopped carrots
1/2 cup chopped celery
1 tsp dried rosemary or Italian seasoning
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can chickpeas
2 cups broth (chicken, veg or beef)
Fresh parsley to garnish and serve

@@cynthiamaynard We absolutely did and I'll be keeping it mind since we often have roast lamb left over and my daughter doesn't like it re-heated but she loved the stew!
