This is on point. Keep in mind the chili powder he uses is very mild. I used fresh Arbol chili powder and 1/4 teaspoon per cup gives a nice bite.

BRAVO! After watching several, very inept Mexican rice, Instant Pot videos, you are the only one who started out right ~~ you toasted the rice first then proceeded with the other ingredients. Suggest you use finely chopped scallions instead of the other onion choices. Gives color and adds to a nicer flavor profile.

Hey, just wanted to let you know that you call for 2 TABLESPOONS of bouillon in this video and 2 TEASPOONS in the written recipe. Also 1 teaspoon of salt in the video and 1/2 teaspoon salt in the written recipe (though you did say you could use less). I did a double batch off of the video and it was so salty I had to throw it out. Not the end of the world but you may want to tag the video with the corrections. But...you weren’t wrong about the flavor...I could still tell how amazing the flavor was and I plan to make another batch. Thanks!

I've always had a problem making Mexican rice in my pot too until this recipe. Not sure how your spice tolerance is, but I think El Pat is just spicy, not really spicy. This rice really doesn't, at least to me, have any/much heat to it. If you're concerned about the spiciness, you can sub regular tomato sauce. Hope you enjoy and would love to hear how it turns out for you!

I'm rather a newbie at this Instant Pot game and have never made rice yet. This may be a dumb question but how much "cooked" rice does this yield? Is it the same as in a rice cooker situation? I ask only because the amount of water is NOT the same in the different methods. This sounds freakin' DELISH! Can't wait to try it out!

Yea it will be the same as a rice cooker situation. Most rice will triple when cooked. The water is different but remember it's under pressure and a rice cooker is not . just follow the recipe exactly and you will be golden..if you do anything different you may get a different result..

Do you let it naturally depressurize after 10 minutes or do you bleed pressure off using the valve? I tried another recipe saying to let it naturally depressurize for 13 minutes after time was up and I ended up with a giant wad of sticky rice

Only thing is my rice cooker doesn’t behave well on sauté.....it over heats real quick.....I thought it was me but it doesn’t even brown the rice....I had to brown it in a big wok.....wok is all I had.....and then throw it into the instant pot with the rice setting.

No, you don't actually. The starch makes no difference in a rice cooker. The rice does not stick together or get clumpy. I have tried both ways in the IP and rice cooker to see the difference and the only difference is it takes more time but other than that, the final product is the same. Cooking on the stove is somewhat different, as the rice is agitated during the cook and the starches can make the rice a bit more sticky and gummy, which is actually a good thing in say, risotto, so you should NEVER rinse that short grain sushi, paella or risotto rice. I use a minimal agitation method on the stove (when I use that method) but typically, I use a rice cooker or in this case, an Instant Pot, which is agitation free. Also, actual SCIENCE has found rinsing the rice doesn't rinse away much arsenic at all (which is actually found in higher levels in brown rice because of the bran and germ). The best method is to cook rice in water like pasta, that is a lot of water, and then drain it off. And all rice is not created equally when talking about arsenic. Some rice from some countries have more arsenic in others and some fields will have more arsenic as well. As a side fact, some rices are enriched. Rinsing the rice will wash away some of the nutrients sprayed on. You can rinse your rice if you WANT but is it a NEED? No, it is not. Cheers! And let's all give science a hug today!!!
