INGREDIENTS:
1 cup DRY red kidney beans
4 cups water FOR PRESSURE COOKING (You will only be needing 2 cups of the liquid that's left after pressure cooking the peas)
Salt to taste
3 - 4 cloves garlic
1 cup coconut milk (not 1 CAN, you need 1 measuring cup of coconut milk)
3 cloves garlic, sliced
4 - 6 allspice berries
3 stalks scallion, chopped or diced
4 - 6 sprigs fresh thyme
1 1/2 - 2 tbsps coconut oil
1 tsp brown sugar(optional)
salt and pepper to taste
1 or 2 whole scotchbonnet peppers
2 cups Basmati Rice, rinsed till water runs clear (Use other rice if you prefer)

✅IF YOU'RE USING CANNED BEANS:
1.Add 2 cups water to instant pot
2. Add 1 cup coconut milk to the instant pot
3.Add seasonings and herbs etc
4.Stir in the rinsed rice THOROUGHLY and follow cooking instructions in video

✅ Steps in video:
1. Select Rice setting
2. Then leave on "LO" for 5 minutes
3. Then turn it off and leave it alone till the pressure releases naturally.

✅ RATIO FOR USING THE INSTANT POT RICE SETTING is usually...
1 cup liquid : 1 cup rice
However, we're not just cooking rice, we're adding peas so the instant pot needs a little more liquid. This is why we need that extra cup of liquid which is the coconut milk in this case 😁
So for this recipe we have...
2 cups rice : 2 cups "Peas water" 😄
1 cup peas : 1 cup coconut milk
