I make a Mexican rice pudding. In my mini Dash rice cooker, I do 2 cups of Jazmine (short grain is fine too) with water only just above the rice and 1 stick of cinnamon (break in half to fit in). once that's done, in a pot heat, 1/2 can of condensed sweetened coconut milk 1 1/2 to 2 cups of nut milk (I use So Delicious Organic Coconut Milk), 1/4 tsp nutmeg ground, 1/4 tsp cardamom, and heat & stir for 2-3 min. Add the steamed rice with cinnamon sticks and all, then stir and simmer for another 5-10 min depending on how soft you like your rice pudding. Let it sit/rest 5 min ( at this point you can add raisins if you like, I like them very much, then serve and enjoy. So delicious and my family loves when I make it.

I will put a bit of cinnamon powder on top, and if is summer I will let it cool in the fridge an eat cold, but here in Finland is mostly eat it hot during winter. some times we add dry redcurrants and toasted almonds (we have loads of redcurrants).

Just Yum! I've tried it with canned peaches. It was alright. Best just as is. Being Filipino, we had it the next day (when there was leftover) warmed with milk, sugar, butter and cinnamon. 😋

We have in the UK pudding rice which is short grain rice and traditionally rice pudding is cooked in the oven. When cooked in the oven you get a nice crispy topping. Mum was forever making rice pudding for us to have as a dessert. She make with sultanas rather than raisins and add cinnamon. Other times plain and we would add homemade jam (raspberry, strawberry, blackberry or blackcurrant were the best jams to use), other times we'd add stewed apples (we find bramley apples are best for stewing), stewed plums or stewed rhubarb. Besides rice pudding, we'd also have tapioca or sago pudding (nothing added) which as kids we always called tapioca and sago pudding frog spawn lol and also semolina pudding to which we added jam (again raspberry, strawberry, blackberry or blackcurrant were best) and stirred the jam in to change the colour of the semolina lol. Not sure if jam is the same in Canada......in USA it's called jelly. Happy childhood food memories .

My mom made it all the time too. I think it was filling and very cheap to make which was goo because we didn’t have a lot of money. I love it with cinnamon, maple syrup or jam. 😁

Whoa! That was delicious ❤ even though I didn't have any vanilla extract and omitted the cinnamon stick! I made a huge batch, 4x the amount, and got a food burn message. Luckily I wasn't around at that moment and when I came back later I thought the whole batch was ruined. However, it was perfect (the pressure had released naturally in the meantime), nothing was stuck to the bottom. My husband took it to a potluck and a number of people took extras home or asked for the recipe. Thanks a lot for sharing ❤

My Mother use to Make Us Rice Pudding She would make it on the top of the Stove... She used the same ingredients as you And___ Would Add Raisins Walnuts and Half n Half in at the End Let it cool..then Refrigerate it for 3 hours And Serve it COLD IT WAS THE BEST ... THING I REMEMBER AS A CHILD EATING....YUM Ive never had it warm But IT SURE TAST GOOD VERY VERY COLD 👍

I made the easiest vegan cowboy soup tonight and thought of you. It would be good if you can store leftovers in your van. 1 can of beans, 1 can of roasted corn, 1 can of green beans, 1 can or rotelle (spicy tomatotes), 1 can of water, 1 T of boullion and 1/2 a cup of rice. Instant pot for 10 minutes or stove for 20 and dinner is ready! It made a ton so if you were in your van and could store the leftovers you could eat for a week. Anyway, thought of you. Grateful for your channel, we are kindred spirits I think.

Here is my recipe: In a normal stove pot put: 1 liter of water, 5 dl of oatmilk, 1 tsp of salt, 3 dl of rice, 1 cinnamonstick. Let it boil, and then turn it down on the lowest heat. Let it simmer without stirring for one hour. Then add 2 tbs of cocnutsugar. In Denmark you would eat it with butter and a combination of cinnamon powder and sugar on the top. I'm Swedish and my mom always put raisins in (which I like, but my children don't..), and then applesauce, milk and cinnamonpowder on top. Yummy! I'm very surprised that your ricepudding is so quick to make..! (Maybe it's because of the instant pot?) We also have the Scandinavian tradition in december to put a small bowl somewhere for the yule gnome to keep him in a good mood. ;-)

Oven cook it with a knob of (vegan) butter on top, sprinkled with cinnamon - the butter gives it a 'skin' on top. Traditionally grandma cooked it in an enamel bowl that had to be oval! x.

i do not like the smell of coconuts. can i use almond or cashew milk instead? that kind of hispanic rice is not available around here. can i use jasmine rice??

Use whatever milk you like. Yes you can use a different rice but it likely won’t be as creamy. The aborio rice is very starchy and therefore creates a very creamy custard. Give it a try though. I’d think It would still be yummy.

Don't ever eat white rice, so I don't eat rice pudding (plus i don't eat cinnamon, milk, or white sugar in recipies). I'd say it's not a dessert for me. A couple times a year I eat brown rice. Wondering if you've ever tried brown rice or would it even work in this recipe since you were very specific about rice type? Along with brown rice, I would use maple syrup, dark brown sugar, or molasses. And probably raisins! We all have very different tastes, eh?

Raisins= dead flies...ok, so not dead flies, but they don’t belong in rice pudding, IMHO. Rice pudding used to be breakfast food in my house.
