You copied my grandmothers recipe down to the T except that she never wasted the egg whites she got then Nice and fluffy and stirred them in , after the cooking . She was one of the best cooks in New Mexico never used a recipe I have been Seeking for her recipe for years I was just a little boy then , she taught me so much about life I could never repay her she was a blessing to me, A real angel, I have been trying for years To cook pinto beans the way she did and can’t do it yet , what a lovely way to spend an autumn afternoon thank you for your video.I am 83 now.

My husband loves rice pudding, I bet he'd love the addition of the lemon rind. I'm not much on it, but I would like to eat again something an old friend who has long passed away used to make, she called it "majarete". She was from Puerto Rico, her family had fled Spain and were then in Puerto Rico and later New York. I wish I had asked more of her story, but I remember she used to make majarete. And I only liked it cold and in small amounts. She put it in small glass dishes. I think she used a rice flour. I'll have to look it up. Nice, your subscribership is growing!

I really love the subtle lemon flavor, although it's not used every time in Portuguese rice pudding. Majarete sounds interesting. I just looked it up and was able to get a good idea of what it must taste like. Yum! I'd love to try it.

It's dangerously good. Tony and I ended up eating all of this one so I had to make a fresh batch in order to take some to my mother-in-law. You'll have to let me know if you try it.

My NM Mom made it very similar, but used all milk, no water and made meringue with the egg whites and folded it in. For my vegetarian family she would leave out the egg.

When it comes to rice pudding, it IS hard to compete with my mother-in-law. She could probably make it with her eyes closed, she made it so much, and it was always perfect. I think I got close, though. Thanks for the encouragement.

I love your enameled Cast Iron. The size seems perfect, where did you get yours and what size is it? This dish looks absolutely amazing, I've watched this video multiple times and crave it so bad. I have yet to try it, but I am working myself up to it.

Thanks. I get comments on it all the time. It's a 5-quart enameled Dutch oven by Food Network. I bought it at Kohl's a few years ago, but they still carry them. Hope you try this recipe. Let me know if you do.
