Hi Poonam - love the channel - am learning to use my new Instant Pot, been what I call a Veganarian (90% vegan, 10% vegetarian :) !) for about a year now - loved Indian food when I lived in the UK and had less experience with it once I moved back to the US. Getting into the recipes I am wondering and hoping if you, or anyone here, can recommend an Indian spice kit - or offer a must-have-at-all-times list of Indian spices that I will need and be using in many of these recipes. It is all a little daunting, getting started, but your dishes look good enough to smell through the computer screen :) and actually doable by little ole me. If you have any suggestions, and have time to help, I look so forward to it. Thanks and keep up the good work.

Hello! Some of the most common spices used in Indian cooking include : cumin seeds, cumin powder, coriander powder, turmeric powder, mustard seeds, asafoetida, red chilli powder. Many people also like to keep garam masala on hand. Hope this helps!

unfortunately, the biggest issue with the IP is it doesn't sit flat inside the body so never gets hot enough in the middle to truly brown anything... and any fat slides to edges. I know they have sold millions of these things and I'm sure their wearhouse is stocked to the gills with more.. but that would be the first design change to fix for a future model... hotter saute temps... flatter bottom.
