Instant Pot White Rice Recipe:
2 cups white rice
2 1/4 cups filtered water
Add both ingredients to Instant Pot. Attach lid, set steamer to sealing position, choose manual pressure setting, 3 minutes. Natural release. Open pot and fluff with fork. Store in air tight container in fridge for up to 5 days.

Instant Pot Lentil Dahl Recipe:
1 onion
2 cloves garlic, minced
juice of half a lemon
350g (1 3/4 cups) of dry red lentils
900ml (4 cups) of vegetable stock
1 14oz can of diced tomatoes
black pepper
1 tsp turmeric
1 tsp cumin
1/2 tsp chili powder
1 tsp coriander
1/2 tsp Garam Masala
1/2 tsp cinnamon
Dice up onion and garlic. Set Instant Pot to Sauté mode. Add a bit of water and when the water starts steaming, add the garlic and onion and cook for 5 minutes. Add spices and cook with the onion and garlic for a few minutes. Turn off Instant Pot. Add water as needed. Add diced tomatoes, red lentils , veggie stock and lemon juice into the pot. Put lid on, set to sealing position and cook on manual pressure for 6 minutes with natural release. Serve on top of white rice.

Cuban Instant Pot Black Beans Recipe
In an Instant Pot, toss in:
lb. dried black beans, rinsed
1 small white onion, diced
4-5 cloves garlic, diced
1 jalapeño, seeds removed and diced
1 teaspoon cumin
1 teaspoon oregano
1 teaspoon Himalayan salt
1 teaspoon pepper
2 bay leaves
4 cups of vegetable broth
Stir it up
Cook on manual pressure for 35 mins
let steam release naturally
grab out bay leaves
stir it up
add juice of half a lime
taste and add salt, pepper and lime if needed
Store with the liquid in a container in the fridge
Serve with white rice
add some cilantro on top for color.

I am plant based, but visiting long-term with my daughter whose large family are not plant based. Thank you so much for the InstantPot options. Beth has a mostly unused InstantPot, so this week I was going to look for plant based InstantPot recipes, so I could experiment! I think everyone but the 6 year old will like these recipes. Gracias!

I have been plant based for 30 years, couple of suggestions; you might want to invest in some new knives, I find chopping onions and peppers much easier with a larger chef knife. Dried beans should always be soaked overnight or 6-8 hours to release the growth inhibiting enzyme, they also cook quicker. I meal prep chickpea (garbanzo bean flour) veggie quiche each week, great sliced for lunches with salad. Great job !!

I'm glad you answered the call to teach! The food prep looked yummy. Today I made a simple garbanzo loaf which turned out very good! My parents were vegetarians,so I was raised a vegetarian. It was only a hop,skip,and a jump to being plant based.

Finally tried the black bean recipe-they are awesome! Definitely something I will be making on repeat. I would make a double batch of these and take to a potluck to impress everyone with how tasty WFPB cooking is.

Those beans were inspired by my time living in Tampa. You could get Cuban food anywhere and I always gravitated to black beans and rice. So yummy. Thanks so much for watching and commenting. I loved that you are just like everyone and can't ever get to everything you intended to do. This video was great. The food looks wonderful. I'm going to try to make the soup soon. We are in the process of moving so it won't be until we are settled in. My meal prep had really fallen behind bc of the move but I'll be back on track soon!

I do the same thing on Sunday afternoon after going to the grocery store. I make a different soup and salad each week. Then, I make overnight steel cut oats: 3 cups of boiling water, 1 cup of oats. Boil for 1 minute. Stir. Turn the heat off and cover. Leave out or put in the refrigerator overnight.

This meal prep video is great! I do all my meal prep on Sunday for the following week also. It's amazing how much time it seems to take, but it sure is great having everything ready for the week ahead. The recipes you showed look amazing! I'm anxious to make them all! Love your videos. The Tim fly-bies are fun. He needs to do walk-through-and-wave in every vid! Also, for your window at night… you could get one of those big tri-fold display poster board things, and cover it with some nice contact paper or fabric (attach with spray adhesive). It can stand in that space between sink and window. Or, since you guys are handy, you could make a hinged mini/short room divider thing that you could set in front of the window, and then fold to store away.

Hey, Nice job, Add turmeric to you lentil, it will get beautiful color and taste and healthy. Also you can cook that lentil and rice together for combined taste with more of onions. It's fabulous. Try and use goda masala from Indian store as well. Garam masala doesn't sometimes go with lentils.

Hello! I enjoy your food prep and your Starch Solution videos! Your veggie soup looks like one I make every week… I also add a head of cabbage, either green or purple, shredded. The only other thing that’s different is I add 1 cup of red lentils instead of chick peas (not my favorite). Have you ever tried adding the cabbage to your soup? I highly recommend it. Take care!

Sorry, I hit send too soon! 1. Joey, do you use white rice or brown rice most of the time? I always learned that brown rice had more fiber. Enjoyed this video and thank you for demonstrating what I consider a reasonable amt of meal prep batching for a person who works outside of the home. I am so weary of watching/reading WPB influencers who advocate for devoting an entire day of complicated meal prep/batching and menu plans that often don't include a day of leftovers (never mind eating the same thing for 3-4 days).

Since you like beans and rice I thought I would share a yummy meal....I take my white rice, pinto beans, diced sweet potato (all 3 pre cooked), add to a bowl with cinnamon and a little salt. I really enjoy it! You can also sub the rice with white potato:)

I always thought rice needed to be rinsed before going in the instant pot. Do you not?

It does have to be rinsed. I realized after I threw the water in the pot that it was not rinsed. I took it all out, washed it and added new water but I had to cut out that part because the video was already over 30 minutes long. But yes, please wash rice first everyone!

Hello. My usual breakfasts other than oatmeal area Polenta (Like grits, love it), tofu scramble, mung bean "Just Egg" knock off scramble, fresh fruit with nuts and seeds and a little bit of plant milk, smoothies, oat pancakes.

Doesn’t the rubber seal in the instant pot absorb the smell of all these different meals? I hardly use mine but after I do cook anything with spices the seal smells gross for a long time.

You will want to invest in extra, different colored silicon seals. A lot of people use red for sweet dishes. You can code the colors for savory, Indian spicy, etc. When you wash the lid, remove the seal and keep it out of the lid until you cook with it next time. Some people store the pot with the lid upside down to allow air circulation.

I have some extra seals that I switch out for this reason. When I do a curry or marsala it lingers forever so designated seals for that

Dawna, YES it does. My IP Always smells like chili because of that rubber seal.
