Instant Raw Mango Ginger Chilli Garlic Pickle
Raw Mango (Kaccha Aam) : 1 Kg
Ginger: 150 grams
Garlic: 200 grams
Green chilies: 100 grams
Wash Raw mango pat dry using towel or let it dry under the fan once it's completely dry you can proceed with further process.
Peel and grate the raw mangoes properly and keep aside.
In a pan add mustard seeds, fennel seeds, carom seeds, Fenugreek seeds and Cumin roast it on low flame and grind it finely.
In a bowl add prepared spice mix and Grated Raw Mangoes along with Nigella (kalonji), Carom seeds, turmeric powder, Kashmiri lal mirch for colour, salt and grated ginger, garlic and chilli mix everything well.
Heat Mustard oil let it cool and add it to the mixture.
Again mix it well and keep it under sunlight for about 2-3 days
Now you can store this pickle in air tight container for upto 12 months (if kept in sunlight for 2-3 days) also you can store it in fridge.
Please note: if you don't keep prepared Pickle under sunlight you can store it for about 1-2 months max.
