Urad dal vada is mostly prepared on all auspicious occasions in South India.no one could say no to these vadas.everyone wants to have them.but making urad dal vada is still a dream for few busy people as it involves a lot of work and little skill in preparing the batter.
these vadas are instant.means, no hours of soaking and grinding are required.this would really be helpful for working women and bachelors.For this recipe, you need to rinse the Urad dal/black gram first.they need to be rinsed through a strainer under running water very quickly.this is to prevent them from soaking.later they should be kept under sunlight until completely dry.if you have no sunlight available then you can keep them under a fan.
once the urad dal/black gram becomes dry, grind them into a fine powder.you can prepare 1 to 2 kg of this powder at a time and store in an air-tight container.put some cloves and a bay leaf to prevent them from weevils or bugs.use the powder when required.
preparing the batter is the very important step in this recipe.the batter should be neither too hard nor too runny.i.e it should be soft(to touch) but still hard enough to pat vadas. you need to add the water little by little while mixing the batter.leave the batter for 1 hour(in normal weather). more than 3 hours in extreme cold weathers.keep the batter in the oven with just the lights ON.do not add onions if you are soaking for a longer time.you can add them just before making vadas.
the batter may become little hard after 1 hour as it is prepared with dry urad dal/black gram powder.so add a little water for proper consistency.mix the batter for once before making vadas.dip your fingers in water before you pat each vada.
after frying the first batch vadas, if you find them hard, you can add very little water to the batter.then the vadas will come out very soft and fluffy inside and crispy outside.try and enjoy this wonderful recipe.Happy cooking..... :)

2 questions. 1 We have ready made fine, unroasted urad dal flour, can I use it with baking soda. (I have no blender) 2. No beating of batter for airation required?

Thanks for the recipe. This was really needed in India's Metros where working women in particular cannot do it traditionally. Video shows adding Baking powder while grinding the Udad Daal. But the Text misses adding Baking Powder. Is it OK if we add Baking Soda at the time of making batter ?

Thanks for sharing this recipe. Wanted to try it. I have few doubts though. Does this method consume more oil than the normal method since the batter is not used immediately once prepared. Also, is it ok if I omit baking soda while preparing? Thanks.

You are welcome. No it doesn’t consume more oil. And you definitely need to add baking soda. Otherwise they may not turn out fluffy inside. And plz make sure that the black gram powder is very fine just like if it is ground in the flour mill.

yes, you can mix the batter at night and take out from the fridge 1 hour before using.the powder absorbs the moisture very soon and may become hard after few minutes.so add little water again to bring it to correct consistency.leave it for at least 1 hour - 2 hours( in cold weather) outside and then keep in the refrigerator and use on the next day.

Thank you. yes, you need to keep it at least for an hour.because the dry powder absorbs moisture and becomes little hard.so you need to add very little water to bring it to a proper consistency.if you don't soak the vadas, they may become hard.if you soak then the batter ferments and the vadas come out crispy outside and fluffy inside.

yes, you can do....for dosa, you need to mix 1 cup of black gram flour with 2 cups of homemade rice flour and prepare batter by adding water and leave the batter overnight, add some water in the morning if required.for idli you need to mix 1 cup of black gram flour with 2 1/2 cups soaked idli rava and prepare the batter by adding some water.

Hi, Deena.They will become hard if you add the rice flour.I use rice flour only when the batter becomes loose just by mistake. that helps the batter to bring into right consistency.otherwise, rice flour is not necessary. 😊
