Thank you Carole, I've been working hard on the intro and outro on my more recent videos. There's probably the sweet spot where I could go a bit too far and put viewers off, but hearing that you like them is really appreciated.

Your reaction to eating your creation was great. I get it. I am going to try semi-dried tomatoes. I have dehydrators and love the flavor of my own dried tomatoes. Store bought dried tomatoes just have a less appealing flavor.

Do you know how long the oil lasts for? I’m wondering if I can keep putting batches of semi dried tomatoes back in the oil and topping it off. Also, great video

I'm not 100% sure sorry, if in doubt you can heat the oil between batches of tomatoes. Bacteria hates fat anyway but some juices will mix in so a couple of minutes heated to around 80c or 175f should be safe. How long the tomatoes last is down to how much you dry them as well, I like mine half or semi dry as the eat well and have amazing flavour

For me I'd blanch and skin them so I can use the skins as a powdered flavoring and I dont really enjoy the skins anyway

That was a cool video..thanks Matt. I was wondering if it would be possible to add another dimension to your kitchen, like perhaps break out the barbie and teach us how to cook in the back yard (or beach etc.) for a party....just an idea...cheers

my bbq is knackered and currently in the corner of my very small garden. I tried taking it to the tip - dump - recycling centre and it was closed because of the pandemic??? Apparently they are now opening again but you have to book I think, so annoying. But I'm definitely hoping to do something on it, have to say I'm not the best bbq cook, but I'm thinking some fish cooked in foil would be useful to a few.

Is the temperature for convection/fan or bake/broil?

Convection fan, but tbh you can adjust the temp up and down a bit. If you're going out play safe and go lower. Also the drier they get the longer they keep, but i like about half way dry, still a bit juicy

I always enjoy Daltry when he's interviewed seems rather based? Not sure about Townshend, heard he had some questionable content on his computer?

Prolly a bit late for camera advice but... switch to manual focus for the close-up stuff. Make sure there’s plenty of light so you get a lot of depth of field.

That type of cutting board is bad for knives! Also, it is better to peel the tomatoes before making tomato confit. The skin gets bitter during the cooking time and if you peel them first you will have much better flavor.

OK Harry if you say so, I like wooden chopping boards but feel free to use whichever one you prefer. Also good luck peeling cherry tomatoes. Thanks for taking the time to point out all of my mistakes
