This gluten free flour is the most amazing flour replacement I have ever used. It produces product that tastes just like the gluten filled cousins. This is a problem for me when I make a batch of something with it (cupcakes, cream scones, banana bread) for my gluten-intolerant daughter and her 3 siblings gobble it up! Gone are the days of them thumbing their nose at her "gritty and gross gluten free stuff". Thank you Lena and Thomas!

I’ve used this flour to make a couple of muffin recipes which turned out great. Today however I used cup 4 cup to make sand tart cookies and they were-well, the worst baking failure I’ve ever had. I’m trying to figure out the chemistry of what went wrong. I rolled them into 1” balls, flattened them a little, made the fork tine marks around the edges, and put them in the oven. They fell flat and were so goopy soft, I couldn’t😂 even pick one up. Worst of all when I took a bite using a spoon, the dough tasted more like flour than sugar and butter. Any ideas on why it didn’t work?

I use this flour make chocolate chips cookie and chinese bao bun and it taste amazing.

It's a good flour, but it's mostly cornstarch & it doesn't make the best Southern brown gravy.
