Two of the camera boxes can be connected together correct? One at camera and one at FOH?

Yes ! You need 1x Master and 1x Slave

It would be great to get this off fiber and wireless, like fiber should always be an option, but it'd be great to get camera control and PTZ control over HDMI wireless.

Using 'Master' and 'Slave' is outdated terminology in the AV/IT/Programming industry... look it up. Most common is Main/Remote, Primary/Client, Parent/Child, etc...etc.
