Would laying on back with hips elevated (maybe pillows instead of bridge) be a good modification for the breathing part of this excercise for a wide diastasis recti? I notice a lot of sagging (extra skin and maybe some coning? ) any time I'm belly down.

Breathing in a hips elevated position could help some with unloading your pelvic floor but it won't challenge your lower abs as much. This position is a lighter load than other front loaded positions but you are right that you always want to watch out for coning. Sagging skin in this position is normal. It's about the muscle engagement underneath it.
