I gotta ask, how do you tap the end of the stroke to get that rounded edge and have it align perfect? I can never seem to get my lines to connect as flawlessly as you do.

Try to put the pen right in the exact place. Sometimes I even use Eraser tool to make the connection point smoother

Все равно не понимаю как на часах сверху делать овалы, закругления и тд ровными, они у меня в линию вытягиваются или в фигню с острыми углами превращаются если эппл пенсил задержать...

В линию обычно если слишком маленький радиус закругления, в остроугольную фигню когда не дуга, а несколько дуг сразу рисуются. Маленькие углы самое сложное, надо пристреливаться :-)
