KACHI (Stewed lamb an porridge): Boil porridge and water for 2 hours. Stew lamb for two hours, with carrots, green bell pepper and onion - spices include red pepper, salt, pepper, garlic, celery. Boil split wheat porridge. Place meat in the center and porridge around the outside. Top with fried onions, then reintroduce the stew broth, turmeric and pepper.

2. BARZOK HOUSE: Gusht-o-Lubia with Polo Shevid + Tas Kebab

🇮🇷 GUSHT-O-LUBIA WITH POLO SHEVID (Meat and Beans with Rice and Dill): First sauté onion in seed oil. Add lamb meat, turmeric and a lot of cinnamon. Add white beans, water and cinnamon water. Plate it and top with more cinnamon
🇮🇷 TAS KEBAB: Skin and slice eggplant in half. Sauté onion in seed oil. Cook lamb with onion to reduce gaminess. Add turmeric and cinnamon and water. Fry eggplant on both sides. Combine meat, eggplant, tomato and add pomegranate paste. Cook until ready.
🇮🇷 SHEFTE ANAR (Pomegranate Meatballs): Mix grated onion with minced lamb meat. Add turmeric, cinnamon, pepper and chili powder. Add chickpea flour and then add an egg. By hand, roll out balls using the entire mixture. Sauté in seed oil. Mix sauté onion, meatballs and pomegranate paste.

Not really, they eat differently. The Kashmir people dont use cutleries either in India or Pakistan. Iranians use cutleries for the meals, since the culture came from Persian/greeks/italians. Later went to the french in mid 15th century, and to the brits in 18th century. But one thing I found weird is that; they dont use left hand to touch food bcz they said they wipe with their hand on toilet. It was a bit disturbing!! Iranians dont do that.

Im not going to defend my government for a second. But I will say that makes me "weird". Most Americans are instilled with extreme patriotism from a young age. People here don't question America because they were taught that we are the good guys. Then the media is there to teach us who the bad guys are. Many of our youth are realizing the military is way more simple and inclusive than college with great benefits not only for them but also their future wife and kids. My maternal great grandfather was from Kashan and he was a jewelry maker. My maternal grandmother was born in Kashan. But after sudden passing of her father she moved with her mother and her siblings to Tehran to live with her mom’s brother daei or uncle. I’m on the same boat as you. I can’t visit my ancestry land either. :’((( enjoy and envy all these travelers’ vloggers.

Iranian cuisine is so non fatty and mild. No excessive spices, no excessive oil. But looks very fragrant and seems like they preserve the original taste of the ingredients...what is it about Iranians that make them so friggin unique? From jilebi to pehlwani, and from pulao to parsis, we owe so much to them! 😊😀
