Non-alcoholic gin would just be watered down juniper juice. Why? I agree with Clisare, I've been spending one month a year no-alcohol for a long time and the quality of NA beer (my preferred drink) has improved greatly. Try it, it give the liver a chance to rejuvenate.

Message to Darren: The human tongue is not sectioned off into zones for sweet, salt, sour, umami, etc. That is a myth that has evolved from bad pictures used in biology classes around the world to describe how the tongue works. Your tongue can equally taste anything no matter where it is placed upon the tongue. Our nose also works interdependently with our taste buds which is why food seems to lose so much flavor when you are sick with a stuffy nose. So endeth the lesson.

its called the "olfactory bulb" and is the wheel house of the aromatic flavours the receptors are the olfactory nerves. A good way to think of it is you season for your tongue and spice/herb for your nose (seasoning is using acid, salt, piquant and umami etc).

Only thing that can be replaced really is the cider, because that's just lemonade anyway :P Especially at 4%. Give them a 7% cider next to a non-alcoholic one, and they could tell the difference instantly.

I remember this too and the experiment where you put sugar, salt, lemon juice, etc. on one spot of your tongue and were not supposed to be able to taste it. I thought my tongue was broken cause I didn't taste stuff where I was supposed to!
