This cold open was better than any movie or TV show I've ever seen. The shot, the sounds of gagging, the genuine fight-or-flight response that got triggered in all of them by the smell. The fade in of the sad music and the minimalist title screen. I'm crying.

Several years ago a guy kicked in the windshield on my boat when he was drunk, a few days later i was in Sweden to do some shopping, I found Surströmming and bought 2 boxes. I opened both of them and threw them inside his big boat.. In the summer. He never used that boat again, and he was not able to sell it either. It was a good day ( for me )

At my request, a friend arranged for me to eat Surströmming on one of my last weekends of my year studying in Sweden. She advised me that it was illegal to open a can of it with any of the windows open so we closed them all. We sat across from each other at a small wooden kitchen table and she opened the can in front of us. The smell hit me like a physical force, like a hot draft in my face making me go all red and instantly raising my heart rate. For a minute I thought I wasn't going to be able to handle it. She kept asking if I was okay. The smell was not just foul, but it was all encompassing, demanding that the brain focus on nothing but it. My head pulsed and I felt a bit faint. We decided to take it slowly and wait till the smell had sort of equalized. 20 minutes later I was a bit more calm, though none of the effects had subsided. My friend put a chunk of the fish ("We got lucky - this one was pregnant!") on a sort of soft flatbread along with some onion slices and handed it to me. I folded it over and steeled myself to take the first bite. Goddamn, it was actually delicious.

Swede here, the smell is bad, like really bad, taste is... I wouldn't call it delicious, but not bad either. It has that funky umami thing going that tends to enhance and give body to other things. Similar to Thai fish sauce, which smells bad but makes things taste good when added. The tunnbröd and onion "surströmmingsklämma" is a classic. I think some slices of cooled off boild new potato and a little dollop of sour cream makes it better, but that might be heretical. As a Swede, I'm sorry, but I think the same fish (Baltic Herring) can be put to much better use, like pickled, brined, smoked, fried or... you name it. :)

Here in Finland I've heard that you're supposed to open the can underwater because the smell can't be cleaned off if it gets sprayed on anything. There's usually a lot of pressure inside the can because of the fermenting. Supposedly that high pressure is also why the rotting fish doesn't have any harmful bacteria, making it edible.

I saw dish being prepared using Surströmming as an ingredient. It looked like a giant open faced sandwich kind of thing and the chef used only a tiny teaspoon of Surströmming to flavor the entire dish. Personally, I think these Irish folks are heroic just for trying it.

I've read a long book about the winter war and one thing the Soviets couldn't figure out was "How the fuck did the Finns survive in this freezing ass weather!?" The temperatures were so low that every morning the Soviet tank crews had to send guards out to form a perimeter. Then the tank commanders would hurl grenades at their own tanks to break up the ice that had basically glued the bottom of the tanks to the grass! That's toooo cold...

Friend of mine worked in Russia for a few years. They'd go fishing, lay their fish out in the sun all day and then go to town on them guts and all, that evening after they'd been baking and getting real raunchy for a few hours. If anything, that tactic of yours would only have 'em stop for a snack.

i actually do eat it multiple times a year its not as bad as it seems if you do it the right way there are many ways to do it traditionally it will be on flat bread with onions and sour cream but you can do so many things with it. also never open the can inside best is to take a bucket of water and open the can outside under the water it eliminates most of the smell.

Well, a year late, but wth. It was according to old stories and rumours, Gustav Vasa who made this a "delicacy" (story says he walked in the harbour and got hungry, but everyone was so poor at the time and the only thing there was a barrel of fish gone bad. And since they didn't want to anger the king, they gave him that. He liked it, and since people used to love what the kings did they started producing it). The other rumour is because of sea travels. Food became bad very quickly so they fermented the fish in salt to keep it from getting bad. Most likely a combination of the 2 is what it is today. Cheers!

And some used to little salt wish made the fish to start ferment. And before you knew it a new dish was born. Might add I don't like it. I have no love for pickled food what so ever. :)

I'm a swede and I actually have never eaten it. Alot of my friends and family hasn't either. I think it was more popular back in the days then it is now. Alot of landlords has actually forbidden this in rental appartments because the stench stays for a while.

I worked at a fish processing plant for a few years.. We processed salmon in the fall.. I spare you the details of some of it..but we would get totes of "morts"...(long dead and rotting fish)... If they were not properly labeled they would from time to time be dropped for process.. I watched grown men, retch, vomit, and run from the smell.. It was horrific... Often I would have to shovel and remove those fish from the line... Not fun... I have a massive tolerance ... I can imagine what you're going through and kudo's to all of you for surviving....
