Respect, from Portugal 🇵🇹 ! I eat octopus every 14 days with my family. We shortly boil it first in very small quantity of water with some potatoes so they get octopus flavor and pink (releases the water inside the Octopus). And then we covered it olive oil in a clay tray and in the oven, like you did.

Octopus, cut cubes, just blanc cook in boil water and place in plate. Pour Seasoning : Custom made Light Soy sauce (light soy sauce, water, green onion, fried garlic oil, msg). Toppings: Chopped Green Onion, Fried garlic. Dipping Sauce : Special Made Dipping Chilli Sauce with finely ground peanuts.

Needed to cook it for a lot longer for it to be tender. We underestimate how tough they are. Simmer in red wine vinegar, black pepper and water for three hours, then allow to cool and steep it in fridge overnight in the cooking liquid- then grill or bread and fry the next day - that's how you really nail it. The sauces and flavours in this were banging though!
