The original phrase is longer and correct. After the often quoted part, it's "in matters of taste." So it's let people buy the version or whatever of a product without judgment or trying to convince them. It's been super corrupted as a way to push down workers.

@@batu5180 You'ld think it is but actually, it's common. Negotiation between front of staff and back always happens but it's whether if the chefs wanna bother with the request or not. Some places don't allow backtalks as crunch time is "Crunch time" whereas others allows these practices to go on. Yes, it seems unprofessional but it's just what happens in the kitchen from time to time. Plus, airing it out sometimes helps sooth the situation better than bottling it up and fucking up the food when you serve to the customer as you're cooking with rage and got blinded by it. That's why despite being the main steam engine of the kitchen, head chefs are there to keep everyone placated and on the groove that arguing shouldn't even happen but if it happens, it happens and it's more common than you think.

Yo, if you're reading this, "the customer is always right" has another part at the end that people always forget (just like the concept of one bad apple). The full thing is actually "the customer is always right in matters of taste" so if the customer wants to buy the ugliest shoes ever then you smile and nod as you sell it to them. If they're abusive aholes, you kick them out.

Man, what I would do for a dad like this. Watching your videos gives me a glimpse into what life would be like if I had a father... And I thank you for that. Even though the feeling I get from it is bittersweet, it still makes me happy to some extent. Can't wait to see more videos like this! My dad left when I was 3, barley saw him my whole life and didn't have a replacement other than a good man that my mom was married to for a few years. My dad died a few years ago of leukemia, he left without telling me or saying bye. A last stab to the heart, and for what reason I just don't know. Never will. I found out he passed 3 months after he did through my mom, and now it's over. Nothing will ever heal that wound, he left me with eternal pain and a hole in my heart.

It used to be “you got this job because your dad built this business” but now they don’t even bother. These 3 guys have an amazing opportunity to follow in his footsteps by becoming chefs or restauranteurs but instead they do nothing. The odd video of their dad’s skills and selling merch off the back of his hard work. It’s embarrassing. Someone like you would kill to have a shot at learning a skill from such a talented dad to be part of carrying on his legacy I bet. Instead he’ll be gone one day and they’ll carry on nothing

The phrase is "The customer is always right in choosing what they choose. " I had people tell me they were allergic to eggs and ordered excessive amounts of mayonnaise based sauces. Or at a steak house insisted that we could make sushi because we had rice and salmon on the menu. Inversely at a Japanese restaurant they wanted sushi without rice, fish, or seaweed and wanted it to look "pretty".

I wish you had included some "Chef" footage. John Favreau practiced with the film's consulting chef quite a bit to prep for the film. And for the last omelette scene that you showed, it's too bad that she didn't watch the many versions of the classic French omelette that Chef Jacques Pépin produced. At least she got the pan shaking at the same time as her spatula was breaking up the curds. I love the concept of the video! How about a "Volume #2" with more scenes? Happy 2025 to you and your Dad. Always hated that. Supposed to have a fine dining background and French training, but that omelette was just sad, and the way she handled and it just wasn't convincing.

One of these days I have to make my way to Lee Restaurant, the closest I've been to Toronto is Quebec, flew through Toronto to get to Quebec but this was before I knew about this channel and your family's restaurant Lee Restaurant. Should have him watch season one of The Bear where the staff messes up, then does whatever they want instead of their job and for some reason the chef is the bad guy for telling them to do their job or get out. I almost had an aneurysm when the dude just keeps making his cake. I might have swung on him.

Best way to kick off the new year! I love watching your dad react to things and 😂😂 as a chef who just started watching Food Wars, I need him to see more of the over the top ridiculousness of that series. Apparently the last two seasons are insane as they no longer had their culinary consultant 🤣

The "Customer is Always Right" is generally misquoted. It's been said in a variety of ways but it is generally "Assume that the customer is right until it is plain beyond all question that he is not", or "Assume the customer is always right in the wider view; even if they are wrong in the single transaction, in which they often are. As this is the principle that builds up the trade beyond the basic service." In other words, respect the customer and provide acceptable service even if they are wrong; which they often will be. As how you treat customers who disagree defines the quality of your services offered. And if a customer has exhausted all reasonable boundaries or attempts to please them, respectfully wish them upon their way.

@Iron Chef Dad @5:40 ... out of silverware Chef, I agree, this is not the Chefs fault or duty, and he should not have been blamed, maybe consulted to let him know they are low on quantity so he can slow the serving time if necessary. In my younger days I was the Dish Washer "King" and Prep Boy at two very large facilities... both totally sucked, but extremely important, and I learned a lot about kitchen flow. If there was a problem with "flow" (as they lived to call it), it was me that would have been yelled at for the silverware, dishes or kitchenware were running low, and if in a bind and the washer was backed up I would pull a rack out or open a new case if necessary, but NEVER the Chefs responsibility. 😳😳😳 ... just my experience and opinion. Thank you again for such excellent videos and a good year!

I've had the pleasure of dining at Lotus many years ago and I really wanted to meet Susur. I didn't get to meet him, but I thoroughly enjoyed my food. I'd love to visit Lee soon as it's near a place I used to work in Toronto and hopefully I'll make it this year. Thanks for the past year, entertaining us. Very cool idea! It would be very interesting to see reactions to various moments of the Ghibli food compilation. Anime from Hayao Miyazaki sometimes has incredibly beautiful cooking scenes.

Love your dad's reaction to The Bear clips. I love that show but no doubt it's very dramatized. I've been to many Michelin starred restaurants and lesser restaurants with an open kitchen layout with about a dozen or more staff in the kitchen and I've never seen that kind of yelling or animated interaction between workers.

yeah, the show itself even mentions that many times. The kitchen is dysfunctional on purpose, not so much because the director things that is how a kitchen should be. They aren't representing a good kitchen.

For The Bear Scene-they’re aren’t arguing about a customer, it’s Claire who has been the love of his life before he went away and then came back to save the Bear and open this restaurant. And his “front of house” is being his cousin(who knows that) in that moment more then his job role.

jet, you should watch the first 10-15 minutes of this movie called Eat, Drink, Man , Women. it comes from the same neck of the woods as your dad and imp sure he will enjoy watching it and explaining it to you about traditional Chinese cooking. its one of the best cooking scene ever filmed in all media. and if you do watch it, i wanna see his reaction. heads up tho, its an old chinese film, 1994

If you do more, maybe dedicate a whoie "episode" to the movie Chef. Its by far one of my favorite movies of all time. Jon Favreau did culinary school in preperation and Roy Choi was the lead food producer. The humble grilled cheese for his kid in the early part of the movie is just perfection IMO.

I waited tables at Joe's Crab Shack for a few years and the amount of time we had to send someone to the store to grab stuff genuinely surprised me (it was my first restaurant job). However, when you take in account volume and sometimes it's just a bit unpredictable: it can easily happen. Fun times!

Everything your dad said towards the end is literally what foods wars talks about and teaches. The main character is a son from a professional chef dad and the son's favorite food is the most disgusting food but he knows how to cook well. Then his son goes to culinary school and has to compete other schools

"The Bear" still gives me PTSD till now having worked in a kitchen after leaving the military and defense dealing line after being in it for 6 years. (6 for serving + private sector defense dealing ie: selling kevlar plates or web gearings) I worked as an expeditor having experience running orders and maintaining the kitchen due to my old family's business of running a food store thus despite not being an excellent chef (I can cook but not definitely not Michelin levels), I still became an expeditor and holy shit does "The Bear" shows how chaotic the whole kitchen really is. I'm basically the 2nd-in line in the back of staff and it's always chaotic like it's Fallujah 2.0 as chefs always talks over each other. We at one point faced the same issue of somehow running out of wine glasses as it kept breaking and even after 40% over the number of seatings, that wasn't enough still and someone had to run to the nearest Ikea to get bulks of it as a standby. Plus, the restaurant I worked in at that point was new and I stayed there for 2.5 years but god damn was it always chaotic which was what "The Bear" shown.

I most certainly saw some Food Wars food recreations. The Fake pork roast is especially popular. The rice with stock/fat cubes too.

Kevin Thronton once kicked someone out of his resturant in Dublin because they ordered fries and then complained they took too lok despite being told they would take that amount of time. Table of 10 people, just told them to leave. He was right too.

funfact about Food Wars Anime hahaha a famous chef and model named Yuki Morisaki helped the making of the Food Wars Anime series in developing the story about the dishes in the Food Wars Anime. That's why all the cooking techniques shown in this story are very accurate. and he also made a recipe book about the dishes that appear in the Food Wars Anime, The book has been published by Shueisha on June 4, 2015
