That’s called wok hei and it’s what you want. That’s how you get the restaurant style smokiness to the rice that most people don’t get at home.

I don't know why there are people in the comments that are so harsh, you did fine and used ingeridients one woud find in London like Dashi powder = kombu salt aka MSG - totally fine unless folks want to grind kombu with salt themselves or use MSG. Bacon is just pork belly and in London it is thick unlike American (streaky) bacon which is thin. Only thing missing was the garlic chips which is just minced garlic and ginger bowned and added at the end. Green onion was fine, white part fried first with the green part added last. Your recipe is just fine, I guess explanations on why you use x versus y would help the folks in the back

This recipe is just a version of Yakimeshi, it's perfectly fine to modify it to your taste or needs, food is about combining techniques and flavours, be creative! Not everything needs to be cooked in some traditional way at all times.

You can use char siu. The best japanese fried rice I've had is cooked in ramen shop with ramen char siu.

My mother was born in Japan, raised in Japan and I never once saw her use dashi on rice, gigantic green onions like that, bacon in fried rice, a wok etc… You’re hilarious! Just because you throw dashi on rice doesn’t make it Japanese😂

Good lord man. All you are doing with that ladle is mashing the rice into mush. That’s horrible! Then you cook the green onions like crazy. Now they are slimy and gross. They go in at the very end. This is a huge mush mess. Fail!
