If you dip your knife in hot water before cutting them that will help to keep them smooth and you wont need to wipe the knife :D

I just made these and they are so delicious, I doubt I’ll ever try a different recipe. I followed the directions with one small adjustment. My family likes the double stuff Oreos and I worried the extra “stuff” would mess up the crust. I used Goya chocolate wafers, 1/2 tablespoon granulated sugar and an extra tablespoon of butter to make the crust. It made a nice firm crust that complemented the dense chocolate cheesecake. Thanks for this recipe, it’s a keeper!

It helps keep you from over beating the eggs once you add them to the batter, which can cause an unpleasant texture in the cheesecake. Not over mixing after adding the eggs is key. ☺️
