I've done the reverse of this leg CX411 ICN to HKG on Monday in Economy though work was paying. Solid product. That main you had is exactly what they served on CX113 in Economy from HKG to AKL on my flight Monday night

I can answer the question on why the soy sauce was the sweet one. I know that sweet soy sauce is more traditional with Dim Sum, and since some items would be already some what salty, it would just make more sense.
