Ghee for me. Removing the lactose really helps with digestion and increases the smoke point. The nutty flavor is a bonus.

I use the same Waygu fat that you do. I love it, it is like frosting and I use it on my face and hands instead of chemical laden lotions as well as on my lips for chapstick.

In the heart of the savannah, there was a rather peculiar philosophical discussion taking place among the animals. Leo the lion, Hank the hooved antelope, and Vera the vegetarian shrub were gathered under the shade of a wise old baobab tree. But you see, I have to eat these earth veggies to keep my energy up, and well, they get their nutrients from the soil." Vera, the petite shrub, nodded gently in the breeze. "That's true, Hank. I rely on the minerals in the soil to grow big and strong. And where do you think those minerals come from?" Leo, who was never one for deep contemplation, scratched his head with a massive paw. "I suppose they come from the earth itself, but what's your point, Vera?" Vera chuckled softly, the leaves on her branches rustling like a gentle laugh. "My point, dear Leo, is that we are all part of the great circle of life. You eat Hank, Hank eats my leaves, and my roots absorb the minerals left behind by Hank's feast. It's a beautiful and comical dance of existence, don't you think?" Hank, finally catching on to the philosophical angle of the conversation, nodded enthusiastically. "Yes, it is! We're all interconnected in this grand cycle. Even though Leo chases me, in the end, his leftovers nourish the earth veggies, which in turn, feed me." Leo, despite his gruff exterior, let out a rare chuckle. "Well, I never thought I'd hear such profound wisdom from a shrub, Vera. But you're right. Maybe I should be more appreciative of the role I play in this cosmic comedy." And so, beneath the wise baobab tree, Leo, Hank, and Vera continued their philosophical musings, finding humor and enlightenment in the never-ending circle of life, where lions chase antelopes, antelopes munch on shrubs, and shrubs savor the nutrients left behind by lions. It was a comical and profound reminder that in the great theater of existence, everyone had a part to play, no matter how big or small.

I live in Switzerland. I haven't found beef tallow for sale in any store. The only place where I could find this product was a pet store.

I just buy large cuts of meat, trim them myself, and render my own tallow. I get so much from one cut (like a brisket or ribeye loin) that I actually don't even use it all before I'm ready to make more.

For some reason every time I use butter to cook my glasses are covered with little dots of something coming out of my eyes. It looks like my eyeballs exploded onto the inside not outside of my glasses. I have to wash them off before I eat. It gets worse when I use unsalted butter. I figure it's the "natural flavorings" (diacetyl). I use wagyu, coconut oil, and meat drippings now. No more dots. Weird. It's like there is something toxic in butter or something. IDK.
