Do you cook with tallow or lard? What do you like to make with them?

Both! And they make firm soaps that you can do so much with. A good basic recipe for soap and you can make anything from that. My latest was a beef tallow soap with thyme, rosemary and lemon. It smells divine. With the herbs finely grinded in the soap. The tallow was from Highland cattle, so it was a bit harder then ordinary beef tallow. Eating a piece of meat from the grill in the summer with tallow is something completely different than an vegetable oil. I make a herb/tallow paste and smear it over the meat. I'm going to try sheep tallow next. My neighbor has a small hobby farm and they are starting slaughter now. So I'm getting beef, sheep and moose tallow soon!

I know french fries taste amazing with tallow, but am afraid it will cause us heart disease, is it the case? or there's nothing to worry about?

Tallow is also an excellent waterproof for work boots,I’m sure its mentioned in comments somewhere but thought I’d throw it in the mix🙃

Never tried tallow, lard many times...going to try tallow. Everything you said is true since cholesterol is good for healthy brain function since cholesterol is a cell builder. Cholesterol is probably the most important molecule in the body. Great upload! Thanks! 👍

I'm in SE Asia and lard is easy to find. Because of its high smoking temperature, I use if for stir-fry and baking. I'm told that Belgium, where the 'French' fry orininated, that they fry their potatoes in tallow which imparts a deliciously distinct flavor. Nice video, thanks.

After i try both of them i prefer tallow , when i fried the steaky pork ,so its oil is splashing while tallow is still ,i think there is difference of nutrients and molecule and it smells good too.

Since we raise our pigs in the forest I ask for the leaf lard when we butcher and render it with a slow cooker. I love it...it is very neutral tasting.

I love Farrow Skin Care! Skin food and face food! You should try their brand. Pig lard is main ingredient! Healed my dry spot on my upper lip.

Note: lard stays good longer vs tallow but for folks that cook a lot it shouldn't be a issue.

I know that some people use lard like a skin balm to avoid any strech marks during the pregnancy.

I hope to begin raising some Goats and Pigs soon...so... once i teach myself Butchery, i should be set on both Tallow and Lard. Geese perhaps also. Might see if i can apprentice at the local game Processor.

In Argentina we use the cow fat...never saw the pig one until a few years ago...but no common....we just melt the fat....n is solid when ccool

Traditional British Fish and Chips use lard for frying fish and tallow for the chips or French fries as Americans call them. Now many fish and chip shops use sunflower oil for some strange reason.

Political activism is behind the change from tallow to vegetable oils. McDonalds was forced to change their recipe for fries from tallow to whatever poison they use now.

@@antipodeanvagabond : misconception hahaha vegetable oils were used as there is a surplus so they pumped them and sold them as frying oils. Vegetable oils like sunflower is meant to be consumed cool like over a salad if you fry them you denature them and they cause inflammation in the body, animal fats are way more stable and healthier for digestion. As an alternative butter is also good or use coconut oil for the vegan version. You are supposed to be active anyways and plus you only use fats for frying sparingly, if you are having fish and chips daily then you ought to be a ship builder which is what this kind of food was designed for, the industrial hardworking age.

For folks that cook a lot Buy by the bucket not the jar more cost effective. If you cook or use only every now and then the jar is just fine.

Great comparison. My problem with lard is there really are no rules that dictate what the pigs are fed or how they are raised. Any "organic" lard can be made with confined hogs that eat their own byproducts and hydrogenated-vegetable fats. Whereas "grass-fed beef" is a federally regulated term that actually means something.

I trust reputable suppliers. Issue is with the lack of availability of thoroughly labled Lard products. E.g. Heritage Pork Sourced, Sustainably Raised, Pasture Raised, Non-GMO Feed, etc. For the most part I've only seen "organic" here in the US, and that doesn't mean anything. Just like "free-range chicken" doesn't mean anything.@@TheFracturedfuture

To me lard is way more soft and absorbable than beef tallow. Tried my rendered pig fat today - lard and amazed :)

Lard is great, too! Tallow has a wider variety of nutrients, but I love lard as well!

Lard is easier to wash and pork fat is traditional food here and can be purchased anywhere. Back fat has a clean flavor, but costs more, similar to butter actually. I can eat lard by itself, on bread with eggs and wipe the plate completely. Tallow is like chewing on a candle, and it stinks. Can you mix tallow and lard without them separating again to get a lower melting point? How about vegetable oils? I have doubts because one time I poured off liquid lard, as if there was a different oil at the top.

I have made many amazing things with duck fat and I often hear it is best for roasted potatoes. Do you think tallow is better for fries than duck fat? We used to have a Belgian Frite shop in my city that unfortunately closed during the pandemic. They were widely known to have the best fries in the city and the owner's secret was beef tallow. Please consider doing a video discussing different animal fats and how to use them.

I remember back in the early-mid nineties, I discovered that McDonald’s french fries were made with beef fat. They were really tasty. I was so disappointed when they changed to vegetable oil. My friend, who was a vegetarian, was absolutely disgusted when she found out it was beef fat lol

Tallow doesn't include vitamin D? Interesting actually if the cow is out on pasture most of the time. Do you know if the fat marbled through the muscle meat has those same nutrients? (If from grass fed beef that is.)

It's easy to find Lard on the self at Walmart regularly. Tallow on the other hand I never see in a Market display. That's to bad because I'd rather have Beef Tallow for those original McDonald's French Fries from the old days. I'm not much on do it yourself type operations and doubt I'll take the time to render down my own. Thanks for the insights anyways.

Wagyu has a lot of fat. I have a jar and a half of it. We live in the Middle East, and we can only find wagyu skirt steak for our fajitas. So we always buy it uncut and save the fat and render it. I have alot of it .

Grass fed cattle can have plenty of outside fat, too. The smoke point is lower than grain fed. Lard flavors things more, which may be objectionable, it also picks up more flavors from what you cook in it. Grass fed tallow should be yellow from the vitamin A, when I see white tallow advertised as grass fed, I think someone is cheating.

Marissa, thank you for all your recipes, especially those on rendering tallow. I’m looking to render leaf lard and was wondering if I could render lard exactly like you render beef tallow. Using the wet method. I love the wet method for tallow and wondering if I can do the same with lard. Thank you!

Thank you! Yes, you can do the same process, you will want to harden the lard in the fridge or freezer though, since it ends up much softer than tallow :)

All religion have a food culture, some example: think about Jesus's multiplication of fish and bread, The prodigal son return celebrated with beef meat, the easter celebration in some christian country with lamb meat, think about jewish religion that forbid seafoods, muslim can't eat pork, think about Ramadan.

I made some beef with potatoes and carrots in the crock pot, when we were done I took it out and the fat on the beef turned white and I saved it. Can I just take those bits of fat and use it for cooking eggs and such or do I have to render it first?

So basically.....they're both the same ......but different!! Miss Piggy vs Mr Cow I've been making homemade bone broth (mostly beef meats/bones) for six months now (yum) ....... and after cool and separated I keep the TALLOW in a container and use while cooking Then thought "what the difference between T vs L" .........and BAMMMM your vid was perfect Thanks

From what I was told, I thought lard was better for our skin because pigs are monograstrics and cows are ruminants. Pigs are more similar to humans in their bio-makeup, so their fat absorbs into our skin better. (Which is also why animal fats are better and more absorbent on our skin than plant-based products, bc the animal fats are more similar to our own bodies). Had you ever heard that? Curious what you think!

Suet refers to the fat from around the internal organs, as opposed to the trim fat :)

It is also very good! Very high in nutrients when it is from free range/healthy geese. I will have to make a video on the nutritional content of other fats, including goose fat :)

Tallow stains are hard to clean off the utensils and kitchen cook tops. How do you deal with the issue since it solidifies very quickly?

They both have their uses. So one isn't better. Lard is easier to get.

Is it safe to eat tallow fried foods that have cooled down? Tallow solidifies like a candle.

Shea butter has a similar consistency, so that might work.

hmm I made some beef tallow from cutting up a large portion of striploin into steaks. it looks pretty clear but I have an issue. I have lost the sense of taste and smell. so how would I know if it stinks lol

Saturated fats are quite shelf stable. I keep mine on the counter for several weeks, and they last in the fridge or freezer for pretty much forever :)

Hi Marisa, I prepare the fries last night and they were delicious, I just have a question, I have high cholesterol , around a year ago I started using just butter for cooking but my lab results were even higher, so do you think tallow is not an option for me? Thanks.

Absolutely particularly if you are on Keto or a Carnevoure diet - great for naturally treating Diabetes ( no fries thou on this diet)

Sheep are pretty much always grass fed, so I think it's great! The nutrients are very similar to beef fat :)

I prefer lard, but only because I eat bacon and use the left over grease. I would have to buy tallow, so really its a price thing. I will experiment with both. I know it's been a yr since posting this, but anyone wanna comment on using either for skin products like lip balm and soap?

Great question! Either can be used for skin. Lard contains a lot of vitamin D. Tallow contains vitamins A, D, E, K, and many other nutrients :)

I think they're very close, but lard has a tiny bit more. But healthy fats aren't the problem, inflammation is what causes high cholesterol in people, from what I read :)

The body can make cholesterol. If you eat 0 dietary cholesterol it adjusts and makes more, if you eat plenty of dietary cholesterol the body adjusts and produces less. Dietary cholesterol doesn't really effect blood cholesterol levels...other factors do

what can i do with rendered tallow 2 times that likes to stay apple sauce texture,,(soft) at room temp? use more SL to make it hard in receipe for soap? would it be better in a hot process receipe to make it get hard without the SL, its not getting hard in soap without the SL. thanks.

I'm happy to try and help! It sounds like you have soft trim fat. Whenever I've used soft trim fat to make cold process soap, it turns out fine and doesn't affect the finished bars at all. So I'm not sure what else to try, but some people add beeswax to firm it up when making other skincare.
