Why giving up or reducing Wheat and gluten can improve your health
Aside from the fact that a grain free diet is a low carb diet that should help you lose weight, what specific benefits are there from cutting wheat out of the diet? This is the question that the video covers. Books like wheat belly have enhanced the popularity of gluten free diets, but due to their very rapid increasing popularity, such diets have redeemed the status of "fad." Nutrition is always complicated, as the human body is - this topic is no different. I covered some of the reasons why cutting out gluten should evoke weight loss and improve health, especially gut health and conditions like irritable bowel syndrome, but there are actually a couple more reasons to avoid gluten not mentioned here.

Based on the other findings in the study, the point that gluten could exacerbate insulin resistance, diabetes and fatty liver still stands.

I was struggling with eczema and skin rashes all my life. I was embarrassed of taking my shirt of at the beach or at pool parties with my friends. Spend so much money on all types of tropical eczema creams. Not even the doctors could help me. 4 years ago Did some research online and came across a low carb diet. I gave up all bread, pizza, pasta ect from my diet. Never looked back. My eczema and skin rashes went away and Never came back I am 40 years old now.

Congratulations! Same experience here. At age 61 I developed horrible itching and redness around my eyes but the doctor said it couldn't be cured, only "managed." The hell with that. I did my own research and gave up wheat, sugar, and most dairy after a short-term fast (3 days). Itching and redness gone. The relief is indescribable. Often, the cure for a disorder is eliminating something, not adding something, but the profits in drugs, creams, and supplements are so huge.

Same here same age.... Anxiety made it the worst..funny thou Desitin ( yup the baby stuff ) cured it after 12yrs of dealing @ 21. I still had bread thou 🤔 with my husband being Italian can't avoid it...

i got terrible rash on hands and my doctor blamed it on my being a chef. he told me to quit my job or he would refuse me treatment. i changed my doctor and he told me about gluten intolerance. cut out wheat, rash cleared up and lost a lot of weight i was carrying for years. great video.

That’s pretty common. I tell clients to stop dairy to give the gut a chance to heal and try after 12 weeks. Most cases found they still couldn’t tolerate it.

Exactly. I am curious about these studies that claim that gluten-free diets are actually more likely to cause heart disease... Like, are the participants just replacing their gluten processed foods with more high sugar high carb gluten free processed foods because then it's not much of an improvement...

Andrew Stillson gluten free products are loaded with sugar they are not a healhy option but unfortnately many people cannot do without their sugar fix. I have substitited unsweetened rice cakes and buckwheat ( not a wheatbased product) coconut flour and milled linseed flour pancakes for bread. Any diet,even vegetarian, is unhealthy if too much sugar is consumed. I have lost 28lb in six months by cutting out all wheat based products. Have cut right back on sugar too.

I don't know how to thank you dude, your videos have changed my life more than twice, I have lost 30 kilos, quit smoking, weed, wheat and sugar, I'm practicing the Wim Hof method daily, and I am winning the battle against eczema!! @@michaeldmingo1525 - In the UK, I have seen them in the frozen vegetable sections in supermarkets. They are sometimes called Edamame. (Google search) - The difference between soybeans and edamame is in the level of maturity when the beans are harvested. Soybeans are mature, while edamame is harvested while the beans are still young and soft.

Hardly a trend, most traditional food was gluten-free accept for a small part of the world our bodies are not build for it. When you're hospitalised repeditively as a child it doesn't feel like trend. It's true that if the American doctor that was visiting my hospital when I was a 6-month old baby given 24 hours to live with the beginning stages of rickets due to malnutrition caused by celiac disease, it's true, I would be dead and not annoying people in restaurants, but when you've been given a second chance and the gift of life and a second chance, you may as well eat gluten-free food and get over it. Believe me eating gluten-free food in the 70s and 80s was not trendy it was just difficult and isolating, so if a few people have found removing gluten from their diet helps their tummies, all the better for me.....more choice and more awareness!

@@celesteteacher3956 that's the equivilent of saying: "i am left-handed, there weren't many left-handed equipment, so now i think it is better when people start doing things with their left hand as they become more aware of my difference" mate, people with anti-gluten diseases are only 1% of the world's population, europe and north africa had a huge diet of gluten full bread, why are they not dead?

I had so much stomach troubles, every day pain, bloating, etc. Doctor said no gluten, then said eat whatever. After using my brain to find a solution, I went gluten free a couple months ago. I feel better. No stomach ache for an entire month! I feel like my insides are finally working right, and it's incredible.

Been gluten free 2 years and i feel so much better, no more brain fog, anxiety, stomach pain or join inflammation. When I do happen to accidentally eat gluten, symptoms start up again. I love bread so I bake with gluten free flour when I want anything sweet.

Me: _eats very little gluten now_ My body: Ha, you still have rashes, depression, brain fog, and fatigue Me: ;-; Jokes aside, I am a lot thinner and less painfully hungry now though. I would always feel bloated and 26in pants were tight, but now 24in pants fit just fine. Also because I eat more fiber rather than eating white bread or pancakes, I feel full for a lot longer, and even when I am hungry, the hunger feeling isn't as painful.

@@naritruwireve1381 you say very little. I suggest cutting out completely. If you have celiac desease even a little will flare your systems up. Have none for 3 months at least. That's when all my symptoms disappeared

I still eat wheat but nowadays I only make my own bread/pizza etc. It's a completely different food when you let the dough ferment for 1-2 days, you can tell most of the glutein is broken down by the yeast since the dough slowly starts to lose its elasticity. Great video!

100%. Besides, there is no such thing as gluten-free bread. Bread IS gluten. No gluten, no bread. On the one hand it’s a marketing scheme, as the term “gluten-free” derives from numbers the FDA essentially picked out of thin air. According to the agency, 20ppm or less of gluten in a product can be labeled as being “gluten-free.” So, you’re still eating gluten (at least potentially, depending on the product), just 20ppm or less. On the other hand, if you like bread, by fermenting the dough at least 12 hours the yeast will break down the gluten chain, making it tolerable in the body.

In the way we've taken wolves and made many different breeds of dogs that aren't found in nature. Cause I know corn at least was nearly non edible before we got to it

I'm in a group with thousands of women who suffer from pcos who are adopting a gluten free diet in order to treat their pcos. Many, myself included have reported significant weight loss, reversing infertility, clearing acne, preventing or reversing near diabetes, improved mental health, energy, hair loss, and even irregular to non-existent cycles. It's crazy what a difference it makes even in those who show no sign of a sensitivity to gluten.

Had joint pains for 14 yrs! Eliminated gluten 5 yrs back...pain gone. Everytime I consume gluten...joint pains come back within an hour. Sharing to help someone else because I wish I knew much earlier.

The sudden in increase in gluten sensitivity corresponded to when farmers started using roundup as a desiccant during harvesting the wheat.

They've been doctoring wheat for decades, the original wheat was a simple grass. Now look at it, there are about 800 of them and they're being used for making furniture and everthing now. Soon they'll be building houses out of the stuff with it. Trouble is it's destroying the land.

Every morning when i was little, my mom made me toast for breakfast and every morning i went to school with a very bloated and upset belly which lasted for hours. Over 30 years later i made the connection.

Same here with milk. Took over 30yrs to make the connection. Doctors should be trained on this. I was hospitalised as a baby as I kept vomiting and the only thing I was consuming was milk. Yet doctors and specialists still couldn’t make the connection.

Mine made me finish my milk, which I always hated. Even in grade school we were forced to finish our milk or we couldn't play outside afterward. I remember moving from table to table as the staff folded them back into the walls of the gym that doubled as a lunch room. Funny memory, but many health problems that we see today are almost certainly a result of such ignorance, including one that I am guilty of too: telling my kids that breakfast is "the most important meal of the day." I only recently started skipping it, and feel much better.

Man, I am waiting for that day.... they thought I had IBS... but then discovered I have Celiac, but going GF hasn't improved my health yet T w T I'll be GF til I die, but I am really hoping to see the positive effects soon... they say it can take up to a year

My 37 year old daughter had suffered with upset stomach pain so much that there would be times she couldn’t eat. Now gluten free all that is gone. She was adopted and has learning disabilities. It was hard for her to understand why she had to go gluten free but now she understands how wheat will make her sick. She reads every label to see if it contains wheat. She doesn’t like the pain from eating wheat. We are at the point that I cook every bite she eats

I have Hashimoto’s thyroiditis and after going gluten free my thyroid started to respond to medication (which it wasn’t before). The nodes on my thyroid disappeared, I wasn’t as symptomatic and I lost 38kgs in less than 6 months. Removing gluten DRAMATICALLY changed the quality of my life

Gluten intolerant here. Since cutting gluten I've lost over 100lbs over nearly three years. 30 of those lbs were lost in the first 4 months of removing it... Went from 300lbs to now training for a half marathon and then 12 mile Spartan Race : ) Excellent video. Thank you.

Loudix Happytime just anything that has wheat rye or barley at first but I’ve done a couple whole30’s, some keto and try to stick with paleo but really I just eat a lot of non processed foods, lots of veggies, low sugar, and also now swear by intermittent fasting.

Will Thorpe well then the issue isnt the gluten, but the food that contains it, wich is processed food , bread,pasta,etc , all youre doing is cutting down in carbohidrates and fat, gluten has nothing to do with it, it just happens that this protein is in food that in high quantities makes people gain weight.

I tried going gluten free for my Hashimotos (thyroid) disease... it went down 5 points (almost 50%) in 3 months. And my gluten sensitivity tests always come negative. The science really needs to catch up on this, as do our food habits

You probably just have an allergy to the chemicals they spray the wheat with or towards something in the process of bleaching/refining the flour. If you were to grow wheat in a green house with a filtered air intake and all natural methods of cultivation(nothing processed, I.E no store bought fertilizer) then I would bet you'd tolerate the bread made from it just fine. People used to eat bread as a core of their diet yet they never had issues, for literal millennia. Only very recently did it start becoming an issue as people have begun purchasing flour and yeast from the stores . . .

I had a food allergy test and wheat was one of my minor allergies. That was after years of issues and not knowing what was causing it. I think there are a lot of people that have never had a food allergy test, probably most people. Until you do, you don't know is affecting you and how.

Fantastic video!!! I also teach my clients to stay away from "Gluten." There are many foods that the average person eats that are just not meant to be inside our bodies. We are being conditioned by the food industry what to eat, for their profits! Meanwhile, the hospitals are overflowing with ill health individuals which makes the medical machine happy. I have Coeliac disease, gluten destroys my gut and I even ended up in a wheelchair for a while. true, gluten free options to processed foods are a lot less healty, which is why you shouldn't eat too much of those. If you eat a lot of fruits, veggies and cook for yourself, it is actually really healthy.

I have been suffering from what seems to be an irritable bowel syndrome for almost a year now according to my physician and discovering your channel made a big difference for me. I have been trying to impliment some of your tips (not intermitent fasting which is in my opinion too socialy limitating) and it helped me quite a lot. I used to be suspicious of meditation or any online guru that thinks he has some kind of miracle solution everything but you prouved me wrong. I have been seeing a gastroenterologist since i'm back in my home country which is a renouned medicine professor here in France and he gave me very similar tips to yours. What I've Learned Well I mentioned it in the other comment but it mostly helped with the cramping. I can't really tell what it's like since it differs a lot from person to person. It is just perpetual pain with some moment worst than other, a chronic illness basically. It's quite handicapping at some points but you get used to it, it's not as if you get to choose anyways

As someone who has celiac I can tell you it's a nightmare. After you get off of it if you get cross contaminated your symptoms are worse because what little immunity you have is gone. You have to be careful because the stress and anxiety from worrying about getting cross contaminated is enough to make you sick. Alot more people have it than you think, by knowing all the symptoms very well first hand like I do makes it easy to point out people that have celiac or are even just sensitive to it.

It is hell 😥. Are you familiar with celiac ataxia? I've been losing coordination as well as my balance and now have to use a cane. I have been taking dapsone for the dermatitis I get but the damage was more inside than I ever could have imagined.

My personal experience: I've had severe hay fever since I was a child, and tried every natural remedy available since regular doctors and immume therapy couldn't help me... There were too many kinds of pollen that triggered my allergies they said. For me this meant largely living indoors in the months April-July. Two years ago I began developing other allergies: apples, hazlenuts, peanut butter... Hell, I became allergic to my own CAT. My girlfriend already was on a gluten free diet and I figured that I'd might as well join her. If it doesn't help it doesn't harm, right? Fast forward to the present, it's May, the absolute worst month for my hayfever - or it used to be, at least. I can go outside as much as I want, eat whatever I want, and have no complaints whatsoever. The only change I made was quitting gluten! This video has convinced me to try this, and I'm very VERY grateful for it! So, thank you WIL!

Mees I have just tried the same thing. This year I've had the worst hay fever ever. I cut out gluten and almost straight away the sneezing and runny nose and itchy eyes stopped. I've been gluten free for two weeks and the hay fever has gone. I'm pretty rapt.

The thing about wheat in the western world is that it's not the same as the wheat our ancestors (even great grandparents) ate. Gluten intolerance and celiac aside, there has been a 100 fold increase in wheat lectin, due to selective breeding/GM to make wheat disease resistant. It's why that white bread might make you foggy but if you were to have a croissant in the south of France (where they use un-altered Durum wheat) you would be fine. It sounds vaguely tin-hattish, but proper bread goes hard and stale within a day; anything else is dubious and should probably be avoided.

Just last year I was diagnosed with this issue at 56-years-old. My story may help others so here goes: After a lifetime of eating gluten products (breads, pastas, etc) I began getting a weird pressure or pain in my left side, occasional bloated gut, constipation, and digestive issues. Like most people I just started eating antacids and figured it was just 'something I ate' and ignored it. Then it got worse and persistent, so I had a multitude of tests and checkups, and after spending a ridiculous amount of money and time, they found... nothing, no known cause. I also had the occasional 'brain fog' and blurred vision in one eye. Then I started getting regular rashes on my elbows, upper back/shoulder, buttocks. At first this was thought to be shingles, because the rashes look quite similar but I often got the rash on both sides of the body at once which is extremely rare with shingles; eventually this was given a "unlikely" diagnosis. Someone suggested I get a blood test or skin biopsy around the rash to test for an antibody called immunoglobulin A (IgA). Turns out I had dermatitis herpetiformis (also called called Duhring’s disease or gluten rash). At this point I went on a gluten-free diet and things improved, up to a point. Not really mentioned in this video it is not only wheat, it's also rye and barley. What I did not know at the time is there is gluten added to many foods I still ate, and I also was not checking labels on food as to the PROCESSING of food, i.e. I ate alot of mixed nuts, but right there on the can it states "Processed in same facilities as wheat, milk...", so the symptoms would flare up again and I could not figure out the cause. So if you go on this diet you have to check everything otherwise even tiny trace amounts can set you back down to zero on healing your immune system, and you have to start all over. Some people have very positive results within a few weeks, others it takes at least 12 months or 2-3 years for your system to restore itself, so keep this in mind. It is a long game, not a quick fix. While some people with DH typically don’t have any of the intestinal symptoms, 80 percent or more of people with DH still have intestinal damage, especially if they eat a diet that’s high in gluten, and this can cause a wide range of very serious health consequences, including: thin enamel of teeth, lactose-intolerant, irritable bowel syndrome, vitamin and mineral deficiencies, osteoporosis, lymphoma, infertility, bowel cancers, nervous system disorders, liver/gall bladder/pancreas conditions, etc. etc. Given that a great many of these conditions are misdiagnosed as to cause, and therefore are not properly treated and either get worse or people start taking expensive medications with dangerous side effects, I think this IgA test should be standard practice in medical facilities now. At least once you know you have it, you can make changes that improve the conditions or they can even disappear entirely after an extended time on gluten-free. I will say here that not one, but TWO doctors openly scoffed at my suggestion of what I thought I had, they both essentially said "celiac disease is overblown and so rare it's not worth testing for... but here take these drugs for whatever you really have". A study performed in 2019 found an overwhelming number of doctors that either knew next to nothing about this condition, or they think it is a "fad", and so misdiagnosis is very common. If you have any of these complications mentioned above, GET THE IgA TEST, just to know, and it may save you a lifetime of increasingly deteriorating conditions and a comprised quality of life. Even if you have no noticeable symptoms _yet_ get the test anyway the next time you have a checkup, it's not that much cost and... why not? You may be able to get ahead of it before it rears its ugly head.

I work as a waiter in a “healthy” restaurant, thus lots of gluten free foods. One time I had a customer who mentioned he was really allergic to gluten and to take extra care not to have a single trace of wheat in his meal, so we did. When he finished, we apparently saw him chowing down on his girlfriend’s gluten ridden apple pie! Til this day I cringe every time I think about it

If I cut out wheat, I immediately stop having headaches, confusion, fatigue all of which cause super low moods. Also one year I lost over 40lbs. Maintaining it however is a different story. I find cutting out everything that contains wheat is really difficult. It's practically in everything 😭

Walk every day. It's helping me with depression. I meditate outside on the sunset or clouds. Without flour it's kinda weird. My blood pressure seems better but I feel myself weird. I don't understand if it's better or worse, it's just strange. But I am just starting and sometimes I eat breaded meat or fish.

Your not alone, been gluten free since 2010 doctors never cared to point my health issues to gluten... Almost everyone is gluten intolerant but do not know it, stomach issues, skin issues etc. are considered as "normal" and treated by pills.... we leave in a sick world.

Celiac is a genetic disease, for example. You either have the gene and may one day develop the disease or you don't have the gene.

I have suffered cat allergies and eczema all my life, one day my eczema shows up on my eyelids, it was a very painful period. After that when I would go in the water and come into contact with anything cold I would get hives. After the hives started showing up I developed 'lactose intolerance'. About two years later I finally went to get my bloodwork done and they checked for allergies, turns out I have a extreme allergy to gluten! I have since cut out gluten and I can't wait to start feeling less tired all the time.

It's normal for the body to get tired after eating carbs as the body must divert more energy to the digestive system to digest them! I also get suuuuper sleepy when I eat, especially if it's carby.... docs still working out whether there's another factor. Feeling a little sluggish can be normally, but feeling totally exhausted after eating is not.

Going glutein free has allowed me to fly. I'm still in beginning but on every jump I have been able to stay in the air a little bit longer. I hope that one day I won't need to fly on airplanes again.

I want to add something you missed in the video: Fructans. Fructans are indigestible sugars. Ever heard of lactose intolerance? Well the same thing happens to most people with fructans. Fructans are found in wheat (also onions and garlic). Eating fructans can cause a lot of GI issues, similar to how lactose can cause a lot of problems to someone with lactose intolerance. It is thought by dietitians that fructans are the biggest source of gastro-intestinal issues for western people (look up MONASH and the fodmap diet). As a result; if you suffer from gastro-intestinal issues; you should try limiting your wheat consumption for this reason (on top of the gluten, which can cause issues for people as well)

Dang onions are the one thing I miss on mostly carnivore diet, but I still eat mushrooms. I did notice issues when I ate the onions too. And I always loooved garlic but I would get nasty garlicky gas for two days lol. Thanks for the info

This video wants to falsely blame gluten for too many digestive issues. So much of our problems are related to high carb / sugary, overly processed low nutritional “ food”. Our ancestors consumption of grains, legumes and vegetables often involved natural lacto fermentation and sprouting that reduced the harmful proteins such as gluten and anti nutrient components, and boosting nutritional values of so much of what they ate. Our modern age of refrigeration, pasteurization, and inoculation has made our food so devoid of beneficial bacteria along with the over ingestion of carbs and sugars that many individual’s guts have become a witches caldron of poison. Blaming everything on gluten is just too simplistic.

Yup. I feel the same. My hunch is the biggest issue is refined sugar, followed by gluten. But the gap between the two I suspect is large. I am going to add more rice to my diet and cut down on the wheat regardless and see how my body reacts.

chris o_o Absolutely right. Modern hybridization has rendered a wheat berry that is much larger and contains greater ratio of starch and proteins to germ and fiber. ( gluten is a protein) When man boogers around with the created order in nature thinking he’s going to improve it, we seem to find out too late we should left it alone. The Creator knew exactly what He was doing when He gave us grain. Thousands of years of recorded history and archeological evidence demonstrate that our ancestors flourished with healthy grains as an integral part of their diet.

I know anecdotes suck for science, but to add mine: I love wheat-based foods and desserts, but about ten years ago, I started to develop severe bowel problems (constipated for days, then diarrhea). It wasn't until maybe four years ago that a friend of mine convinced me to try to stop eating wheat (I mentioned this to my doctor and she said it'd be worth trying). After a couple of weeks of no-wheat I was feeling great and, so long as I kept myself from eating wheat, I wasn't having the bowel issues I had before. Of course, being that I love pasta, cakes, brownies, and all manner of other things made from wheat, I occasionally fall off the wagon. If I only have a small amount, I'm mostly fine, but if I have a couple of slices of pizza or eat something like that several days in a row, even in small amounts, I end up with the aforementioned constipation and discomfort. I weigh myself pretty much daily, and what I've found is that I'll gain around 6lbs during these episodes, but it'll be gone within a week, which tells me I'm holding a lot of extra water weight. So as much as I'd rather it not be the case, I shouldn't eat wheat, though I can get away with an occasional piece of cake or whatnot.

you know other grains contain less gluten, so you could make your pizza dough with spelt flour (or even gluten free). Cakes work well with light or even mixed with wholegrain spelt flour.

The symptoms of non-celiac gluten sensitivity can be much worse than those of celiac. I too have it, I get dizzy for a day, terrible body aches, fever, chills, sweats, brain fog, nausea, motor coordination issues. It usually lasts for 3 days if I get hit accidentally. But when I stay on the right path I’m back to my normal physically active self. It’s almost like getting the flu. It’s terrible. Ironically, when I am in Europe (Germany) on vacation, I can eat bread with dinner and have ZERO symptoms. I come home and have the crumb of a crouton fall in my salad at the salad bar and I am sick for days. I strongly believe it has less to do with the gluten and more to do with how the crops are grown and prepared, yet I have no data to substantiate this claim. I hope one day we find out.

I have struggled with my skin and stomachs issues for about 2 years , the last few months I've been bloated 24/7 and nauseous. I switched my bread to gluten and wheat free , my bloat went away and the nausea was gone and my skin has started to clear , I had all the symptoms of celiac and I was tested for celiac and i do not have it , but I had the thought maybe I'm sensitive to wheat ,it's amazing how just cutting out the wheat my health has improved ... ( My diet consisted of alot wheat products ). A few family members of mine have a wheat sensitivity as well. I won't be switching my diet to gluten free but I will be reducing the amount of wheat I consume ...

My friend teaches at girls school in Toronto. She had students from the Philippines. They were all skinny when they came; they ate rice, bread and deep fried food in their own country. After two years in Canada, they all gained tremendous amount of weight. I’m wondering if the wheat and rice are different in North America.

You’d be surprised by how many food items contain gluten. As one with a wheat allergy (wheat contains gluten), I’ve come to learn that it can appear in processed meat, gravy, soy sauce, and more. Another issue is that some food items contain “gluten free wheat” which is not highlighted as an allergen, despite obviously being harmful to my health.

Natural unsaturated fats have double bonds in their carbon chains in the cis configuration, thus they are called cis fats. Catalytic hydrogenation is employed to add hydrogen to the carbon atoms in these bonds and reduce them to single bonds thus making saturated fats (which are chemically identical to natural saturated fats, which are neither cis nor trans since they have no double bonds), in order to cheaply produce artificial solid fats from comparatively abundant natural liquid fats. However, the reaction is reversible and a portion of the saturated fats revert to unsaturated fats, but in this reverse reaction the double bonds are preferentially formed in the trans configuration as it is more stable. Trans fats have a very different spacial orientation compared to cis fats (the carbon chain is mostly straight rather than bent) and our enzymes are therefore ill equipped to deal with them, resulting in a disruption of normal lipid metabolism and leading to all manner of disease. The practical result of this information is simply that trans fats have no place in a healthy diet and should always be avoided; unlike other types of fats there is not much nuance to this subject

6 years ago I suddenly got severe eczema on my eyes and face, and 2 years ago I realised it was caused by gluten. I tried at least 5 times eating a gluten-free diet (rashes, dry patches, swelling and redness cleared up after a week or so), and when reintroduced, I had breakouts again.

Many people may not believe gluten free, but I do. 4 years ago, I started having acid reflux, OTC medicines didn’t work at all, I could only eat a little bit food, and still had reflux every time I ate, and I was losing weight every day, I was so scared. Finally, my doctor gave me Dexilant, 1 pill a day, it worked very well, but I was afraid of the side effects. One day, one of my friends told me to try gluten free, so I tried, and stopped taking Dexilant at the same time,one week later, my reflux was gone. I was so happy and had kept gluten free for 6 months. Then, I started eating regular breads and cookies again. After 2 months, my reflux came back, and even worse, I had sore eyes, doctor thought that I was allergy to pollen, but again, eye drops didn’t work. So I started gluten free again, and I barely have had reflux since then, It has been 3 years without Dexilant. I even had a test to check if I am really allergic of gluten, the result is negative, but I don’t dare to eat food with gluten again. Hope my experience can help some people.

They only significant study you quoted was a non-human trial.Humas react differently to the various proteins than other animals. One of the books is based on personal stories. Statistics. If you sample 10,000 people chosen at random, and it turns out 100 (1%) of those have celiac disease, then you can pretty safely assume that something approximating this percentage holds true for the entire population. Let's say the population of the US is 300 million, and assume that 1% have celiac disease. Then 300,000 have this disease. Now, if only 15,000 people have been diagnosed, this means that 285,000 people, that is 95% of the 300,000 suffering from celiac disease, remain undiagnosed. Thus you can conclude that 95% of the population of people with celiac disease remain undiagnosed!

Weeel true but incomplete. First thing first, gluten sensitivity is not a result of us eating more bread but from the technology that made wheat products more readily available. Its not gluten that is causing all the harm in the world it is excessive use of it that does. You see if you make a bread from white flour (where grain barn is mostly removed and flower consists mostly of concentrated endosperm where gluten lies) since gluten acts as a glueing agent bread loaf can grow to be 5 times bigger than if you used same amount of wholegrain flower. Since most of our grain products are made from white industrial flower people are eating much more gluten than before when people used to make their own bread from wholegrain flour. So its not really about grains themselves they have high nutritional value, it is about industrial flour that is pretty much worthless but everpresent.

What about sourdough? According to Weston Price's extensive study, the fermentation pre-digests the gluten and makes it much more available to our body. After watching your awesome video, I am even more interested in if the sourdough is still safe or not :) Personally, learning how to make sourdough bread really improved my health, compared to when I was eating non-sourdough bread before!

This is very interesting and informative, looking at many different facets of the effects of gluten in our diets. Two things you bring up, the fact that we are eating modern hybrids of grain designed only for a greater crop yield, and breads are not fermented in the traditional way, i.e. the sourdough process (not to mention, the flour is generally highly processed to pure starch with all nutrients removed). Studies have shown that the sourdough process through longer fermentation and the introduction of acids from the bacteria involved break down the gluten more thoroughly, and also lower the g i rating significantly. Could it be that all these combined factors have made bread, a staple of humankind for thousands of years, into something our bodies don't recognize as a healthy food anymore?
