If you're wondering: "is the french diet better?" You've come to the right place. The Glucose Chef, Chef Mathieu Vallart joins me today to weight in on whether or not the french diet is better, and what factors may attribute to their low rate of diabetes, why french people are so thin, and how specific behaviors can have a major influence on glucose response. Is the french diet better because of all the bread, wine, and butter they consume? Surely it can't be possible to have it all and stay so thin... 😉
Approximately 96 million American adults have pre-diabetes, and more than 80% don’t know they have it. Now, what do we need to do to balance our blood sugar and prevent pre-diabetes from happening? Today on the show, Dr. Taz is joined by the Glucose Chef, Mathieu Vallart. Chef Mathieu shares his insights on pre-diabetes prevention inspired by the French lifestyle. He grew up in the magnificent vineyards of the South of France, Bordeaux, where food is synonymous with pleasure. He spent the past 15 years residing in South America, where he learned how to add a spicy kick to his dishes. He is a Chemical Engineer who pursued a traditional industry career after watching his health decline due to poor lifestyle and nutrition, turning his love for food into a powerful biohacking practice. He made it his mission to help people implement those same strategies from the French lifestyle to stay away from metabolic diseases and feel better.

I am French and a doctor in natural medicine. Always had the same weight. Look younger in my late sixties than a lot of women in their 30's. All natural. No work done. Eat with pleasure. American culture misses totally the notion of pleasure, and eating with pleasure. Walk everyday, eat during meals only, chew well your food, do not snack, eat quality food, no processed food, no junk food, no GMO , no food with glyphosate, preservatives, wrapped in plastic, no low-fat food, no sugar or very low intake such as organic honey, no gluten. Sugar makes you fat, not fat. Eat plenty of healthy fats, the best is duck fat to cook meats and ghee for the rest. Eat fresh, organic, home prepared meals. Do not eat vegetarian or vegan. My patients with the most health issues in their 50's and 60' were vegetarian or worse, vegan. Eat only grass-fed, pastured organic meats and wild fish. Get chemicals out of your environment, especially all these awful synthetic fragrances full of nano-chemicals that pollute every cells of your body and are toxic for your brain. Chemicals make you fat and your brain becomes toxic so you get Alzheimer and get brain fog. Clean up your personal care products: hair, skin, etc. Choose fragrance-free or natural fragrances and chemical free, nanotechnology-free products. Relax, breathe, did I say no snacking between meals? A constant habit in the US! Carry yourself with grace and dignity. Dress well, do not slouch, work on your posture, walk with class and confidence, and please, no tight leggings, they look cheap, vulgar and horrible on most women.

As a French national I beg to differ : 30 % of us are overweight. The so called french diet is full of proteins,butter, cream and saturated fats. The Mediteranian diet is way much Heather and pretty common in the south) french riviera region.The young génération is all about fast food, pizza, burritos and stuff...

And he mentioned that the younger people in France were eating more processed foods and were exhibiting those symptoms associated with metabolic syndrome. The "American" way of eating and food industries has infiltrated other countries that for centuries have enjoyed native cuisine and have been able to maintain normal weights and health, long into their senior years. If we fed our animals what we feed ourselves, they would get sick and die. This is why we are told not to feed our pets from the table. Our food is full of chemicals, sugar, unhealthy fats, salt and other components not compatible with health. We cannot imagine or know the effect even small amounts of agricultural and food processing chemicals are having on our bodies. And they aren't talking. When it says "Less than 2% of:" it shouldn't make us feel it's OK, because that amount is still not good. Also, labels do NOT tell you everything that is in there. Some products get snagged for not revealing certain ingredients on the label.

It’s the Raw cheeses and dairy! Pasteurization kills the miraculous properties of dairy and raw milk! The French Paradox is eating RAW dairy and cheeses!

It’s not all rainbows and roses in France . There is a huge societal pressure in France to be thin . French woman in particular have high rates of eating disorders, even children are criticized or even mocked if they put on a few pounds .

NYer living in Paris for 10+ years. The amount of eating sugar here is rampant. The French are finally waking up and paying attention to US docs on the harm of sugar. They’ve been translated into French & here on youtube. Plus now the French are eating tons of US chain fast food - really sad. They are thin no longer in my opinion. Diabetes is very common here. It used to be people only ate desserts on Sundays. No more. The amount of ice cream shops in Paris is shocking. This guy has been away from France too long. The foodie culture has changed and not for the better sadly.

Totally agree with you. France is not France and the French are not French anymore. When I return to my native France, I am appalled to see what this formerly healthy, creative, sexy, and culturally stimulating country has become. France is toasted. I am French old school, but all that is gone now.

I wish I could believe this because I spent the last 6 weeks strictly eating vegetables, cheese and olive oil as well as home-made sauerkraut and the occasional red wine. I walked between 2 and 6 hours every other day and lost absolutely no weight. My calories were down but not super low and everything was logged to ensure I did not cheat. In this time I cut back on meat and fish as well but did eat more nuts. I'm continuing to eat and live this way because I feel better all over. But I'm still fat. Haven't lost a single lb.

Could also be that when you lower your caloric intake and increase your exercise, you lower your set point.

Of all the EU members France has the highest number of chronic diabetes. Their high carb diet may be the reason.
