The marshmallows might have taken more time to dry because of the humidity where you are. The last time I made marshmallows it took days for them to dry properly because I forgot to keep in mind the fact that it was raining adds dampness to the process.

I know that you aren't a big fan of the use of drawings instead of actual photos of the foods but I think that you'll like "Recipes from the World of Tolkien". It's not an official cookbook but it feels really well made (even though some of the recipes are for 5 year old)

I always had a stronger tendency for the dark side, so my love for the dark-side recipes in this book were written in destiny. But as my father was a confectioner who teached me everything he knew, i'm happy to say that the force is strong in me. But damn, do i love molten lava cakes 😂

This is so interesting. I have the Star Wars Wookie Cookies cookbook which I mostly use for the French toast instructions. It has really quirky action figure photography. Lava cakes are super hard.

Marshmallows can be temperamental, personally I like the Italian Meringue style which is a really similar process to what you did except it subs in an egg white for some of the gelatin and I don't think it uses corn syrup, just sugar and water. Stabilizing a meringue to be soft and chewy may also be tastier than whipping air into gelatin

It’s good to alternate with just the ratio on the ones you tried. Since you know what minor mistakes. Also, just add a post-it note on the books you bought, and make a key note on what additional or subtract ingredients. Which, is another good idea

I've actually used this exact book before for recipes, my whole family loves the brownie recipe (best kept cold, as the frosting doesn't taste good at room temperature), and I tried making the marshmallows that you made, but they burned because we didn't have a candy thermometer for the process.

This really seems like a cookbook for families, especially ones with pre-school age kids. It looks like it's small & light enough for a child to carry & recipes like the Loth-Cat snack & marshmallows are ones a lot of kids would really enjoy. Some steps such as heating things in the microwave would mean that kids would need to work with parents or elder pre-teen/teen siblings to make the recipes but that may be the point in encouraging older family members to work with younger ones, having fun with making the goodies as a family team then enjoying the fruits of their labor together. As for the more complicated recipes like the lava cakes, those may be in there just for older kids &/or parents who want to make more challenging things on their own 🧑🍳

The marshmallows turning too hard might mean your sugar got too hot/low liquid content. You might not have taken it off the heat fast enough or maybe your sugar thermometer isn't accurate

Hey man. Love the video! But i believe what happened to your marshmallow is that you cooked the sugar too hot on the first batch. It was beginning to caramelize when you poured it into the mixing bowl. It was pretty yellow. The sugar is very important for the structure of the marshmallow but if you cook it too much it will be too hard. On your second batch you sugar mixture was very clear so you probably cooked it correctly but in trying to fix it with less gelatine you ended up with too soft a result. Next time if your sugar goes too far just grab another pan and redo the sugar stage before combining it with the gelatin and you should be good! Keep it up, love the channel!

I have grown a sort of disdain for cookbooks with no author, if only because the recipes from books I have without authors have not been that good. I also find it agitating because those books were commercial first and foremost, they were there to promote kitchen stuff or an ingredient product, and the focus tried to be on the product it should be selling, or on the theme, and they want people of associate the food with the brand, product or organisation, not the individuals who, in theory, came together to make it. I try to keep in mind that some books are collaborations and thus having all the names could be a hasslenut, but even the book on lamb I have, which is a big collaboration, have a "leader" that shows on the front, and all names are mentioned inside. Which is why it agitates me that this book doesn't have a name for the author(s), because even though all these themed cookbooks are promoting a product, this feels even more so when they do not give us a name to the authors and they try to keep the focus 100% on the product, ie Star Wars and Disney. They don't want any association with the individuals that made the book, it all should hinge on the brand product (like everything Disney does nowadays). Perhaps that is also why it is not about lore but about aesthetics, I don't know. It's not some conspiracy theory, just my thoughts on that. I am glad the Galaxy's Edge cookbook had the author's name in it.
