In this video is so much that probably it's my best video,
I show how to make the perfect pizza dough for business, how to make bread from pizza leftover pizza dough, a few demos and also my entire world competition.
The pizza dough used for my show is this:
Poolish : 1L. water 1.kg flour 5gr. honey 5gr. yeast (24 hour in the fridge)
Then add on the poolish 3L. water , 4.600 gr. Flour, 140gr. salt.
then rest 1 hour , after make into ball and then rest 2 hours.

What I liked most about this show was how you handled yourself professionally to the judges and staff, your manner was calm and controlled as you prepared and presented your talent and knowledge to the judges. You smiled throughout the competition and carried yourself with confidence. Your pizza looked amazing and your dough looked so smooth it looked like marble. I enjoyed watching the crowd of people around your booth intently watching and listening to you talk, you can tell they were impressed and interested. I was glad to see you used the Gozney oven because I've been considering purchasing that oven so your demos really help my decision because I feel it's a good oven even though I've never used one. I hope in the future you will compete again, I really wanted you to win first place but that fact that you took your time and energy to compete shows you are already a winner because in events like this you always come away with something gained from the experience. My pizza last night came out perfect thanks to you and what you taught in the Master Class. I had to bake it in my oven on a stone at 550 F. Then followed your directions on adding the cheese when the bottom of the crust had cooked and placed it under the broiler to melt the cheese. My husband could not stop eating and taking photos. Vito, don't be too hard on yourself or disappointed that you didn't get first place. It looked like a very hectic event and making pizza so early in the morning must have been a whole new challenge. I think the judges weren't interested in judging/eating pizza so early in the morning. They should have all had an espresso first :). This is the dumbest thing I have ever heard. Were you there to even taste or analyze the competition. The judges are considered pros. To be a blind sheep is not a way to judge competition. Yes we have learned a lot from Vito, but there are many teachers in this world. One just does his best and see how they like it. I am disappointed in Vito for saying that he will not compete anymore...that is not a true aficionado of the art. I wonder if the winners give pizza classes. In my career we had many teachers, and we learn what to do from some and what not to do from others. They were all professionals in the business.
